    sweet potatoes & bananas recipe?

    I've been looking all morning for a recipe I could have sworn I read on here in the last few days.  It had baked bananas mashed in with the baked sweet potatoes.  I remember honey and a crumb topping with brown sugar and flour.  Does anyone remember this recipe?  Am I crazy?  If so, I'll make it up as I go along and top it with Star's sweet potato casserole topping - INCREDIBLY DELICIOUS!  I promised sweet potatoes tonight with Rice Florentine and Chicken over Avocados.

    Whipped Sweet Potatoes and Bananas with Honey
    Recipe courtesy Tyler Florence
    Prep Time: 20 minutes
    Cook Time: 1 hour 5 minutes
    Yield: 10 to 12 servings
    You can roast the potatoes and bananas ahead of time, then put it all together just before serving. Then heat it up in the oven.

    10 medium sweet potatoes, scrubbed
    4 bananas, unpeeled
    1 cup (2 sticks) unsalted butter, at room temperature
    1/3 cup honey
    Kosher salt
    1/2 cup all-purpose flour
    3/4 cup dark brown sugar
    1 1/2 cups pecans, chopped

    Preheat the oven to 400 degrees F. *** the sweet potatoes all over with a fork, put them in a roasting pan and roast for 30 minutes. Toss the bananas into the pan and continue roasting for 10 to 15 minutes, until both the bananas and potatoes are very soft. Remove the pan from the oven but don't turn the oven off.

    When the potatoes are cool enough to handle, scoop out the flesh into a large mixing bowl. Peel the bananas and add them to the bowl along with 1 stick of the butter, and the honey. Season with salt and beat vigorously with a wooden spoon until everything's well combined and the mixture is fluffy. Spoon into an oven-proof serving bowl and smooth the top.

    In a separate mixing bowl, use your fingers to rub together the remaining stick of butter, the brown sugar, flour, and pecans until the mixture is the consistency of coarse crumbs. Sprinkle the crumb mixture over the sweet potatoes and return to the oven. Cook for about 20 minutes, until the crumbs are golden. Serve hot.

    Thank you, Chefly; you're a doll!!  That's just what I was looking for!  I'll let you know how it goes.

    P.S.  It's nice to know I'm not crazy yet.

    Time got away from me, so I had to improvise.  What I ended up doing was using a

    28 oz. can of Sugary Sam's sweet potatoes/ yams in place of the roasted ones.  I used

    3 small bananas, roasted 10 or 15 minutes

    4 Tbs. butter   

    (I didn't have honey, so I left it out, but DD1 said I should definitely use it next time)

    For topping, I halved the recipe, using

    4 oz. butter

    1/4 c. flour

    1/3 c. (rounded) brown sugar

    3/4 c. chopped pecans

    Everyone kept saying there was a flavor they knew, but they couldn't place it.  It didn't receive rave reviews, but no one said they'd throw it out, either.  I would make it again.  I enjoy a change of pace now and then.

    YIKES! That should be 4 TBS. not 4 oz. butter in the topping.  Tired, silly me!

    I may still give this a try. Half my family liked baked bananas and half doesn't, that is why I haven't made it yet. I know they would like the topping and that might sway them to the 'like' side. Big Smile
