I knew I had one somewhere. Made me think it is time to get my recipe book cupboard cleaned out and organized. I am not sure if this is the one you had in mind but here goes.
Tussian Beet Salad
2 cups beets sliced (I sliver them) Save
1 pkg lemon jello
1/4 c sugar
1/4 c vinegar
1 tbsp prepared horseradish
2 tsp lemon juice
1 sm pkg. cream cheese
Milk
1tbsp Mayo
Drain beets reserving liquid (if using fresh beets sub water) Add enough water to beet juice to make 1 1/2 cups. Bring liquid to a boil. Add jello and stir until jello is dissolved. Cool and add sugar, vinegar, horseradish and lemon juice. Add beets and pour int a mold or 9 inch glass dish. Refriderate until salad is completely set. Mix cream cheese and may adding enough milk until it is the consistency of icing. Sread over top of salad and regrigerate until serving time. If using a mold unmold and decorate with the spread.
I really did like this recipe when beef was on the menu. Works with other meats as well but it can get quite strong depending on the horseradish that you use. Hope you like
