    We are going bananas on The German Corner

    I am an expert about ripe,ripe bananas.I always seem to have some around or in the freezer.We like to buy them,because they are great as a fast snack or to take some with you,that one does not starve to death on along car ride or on an airplane flight.I make lots of bana breads and cakes. Most of the recipes are here from the BB.I found the best banana bread and I make it often.

    This recipe is from DivaSharon and it is yummy.
    Definitely a keeper. In fact, I'm going to use it when
    I sell baked goods at the farmer's market this spring
    and summer.

    Brown Sugar-Cinnamon Sour Cream Banana Bread


    Preheat oven to 325°

    3 cups flour
    1/2 cup white sugar
    1 cup light brown sugar
    1 or 2 tsp. cinnamon (your choice)
    3/4 tsp. salt
    1-1/2 tsp. baking powder
    1-1/2 tsp. baking soda
    3 Tbsp. vegetable oil
    3 eggs
    2 tsp. vanilla
    3/4 cup orange juice
    4 heaping Tbsp. sour cream
    3-4 very ripe bananas (2 cups)
    1-½ cups chopped pecans (optional)

    Combine dry ingredients. In another bowl, combine
    beaten eggs, oil, vanilla, orange juice and sour
    cream. Make a well in center of dry ingredients and
    mix in liquid ingredients. In small bowl, mash bananas
    with fork. Continue bananas with hand mixer until
    pureed and as smooth as possible. Add to batter; do
    not over-mix. Stir in nuts, if desired.

    Grease two 9”x5” loaf pans with cooking spray. (I use
    a dark metal pan – if different, raise temp to 350
    degrees) Divide batter evenly. Bake for 50-55 minutes,
    checking with LONG wooden pick. Bread is done when
    pick comes out clean. Cool in pans for 15 minutes,
    remove to wire rack and continue to cool. Wrap tightly
    in plastic when cool. Bread will be moister the next
    day. No need to refrigerate.

    2 large (10-inch) bananas or 4 medium bananas will
    make the required 2 cups of banana puree.

    1 9 x 5” loaf = 3 minis (bake 40-45 min.)

    Indescribably Delicious Banana Bread
    AKA Praline Soaked Banana Bread

    This is outstanding and makes two large loaves and I
    always ending up giving one to a neighbor. The topping
    is what really makes this so delicious. It truly is
    indescribable and comes from one of my favorite
    cookbooks, Necessities & Temptations from the Junior
    League of Austin. Enjoy! :O)

    Topping, put on after baking:

    6 tablespoons butter
    10 tablespoons dark brown sugar
    5 tablespoons milk
    1 cup or more, chopped pecans

    Batter:

    1 cup butter
    1 1/2 cups sugar
    2 large eggs
    4 very ripe bananas, mashed * or 1 3/4 cup mashed
    bananas
    1 teaspoon pure vanilla extract
    4 tablespoons buttermilk
    2 cups all purpose flour
    1 1/2 teaspoons baking soda
    1 teaspoon salt

    Preheat oven to 350° F.

    Cream butter and sugar. Mash bananas, beat 2 eggs and
    add to the bananas with vanilla and buttermilk; mix
    well and add to creamed butter and sugar.

    Sift together flour, soda and salt. Add to banana
    mixture, beat well.

    Pour into 2 greased and floured 9 x 5 x 3-inch loaf
    pans.

    Bake 45 to 50 minutes or until bread pulls away from
    sides of pan. Cool.

    To prepare Topping:

    Melt butter in saucepan. Add sugar and milk. Cook
    until very syrupy. Remove from heat and add chopped
    pecans. Pour over bread spreading to all the corners
    and place under broiler until bubbly and brown. Watch
    closely. Do not let burn.

    Here is my banana bread recipe. I is very good.

    Marbled-Chocolate Banana Bread

    2 cups all-purpose flour
    3/4 tsp baking soda
    1/2 tsp salt
    1 cup sugar
    1/4 cup butter-softened
    1 1/2 cup mashed ripe bananas (about 3 bananas)
    1/2 cup egg substitute
    1/3 cup plain low-fat yoghurt
    1/2 cup semisweet chocolate chips

    Preheat oven to 350 degrees.
    Combine the flour, baking soda and salt, mix well.
    Place sugar and butter in a large bowl, beat with a
    mixer at medium speed until well blended. Add bananas,
    egg substitute, and yoghurt: beat until blended. Add
    flour mixture, beat at low speed just until moist.
    Place chocolate chips in a medium microwave-safe bowl,
    and microwave at high 1 minute or until almost melted,
    stirring until smooth. Cool slightly. Add 1 cup batter
    to chocolate, stirring until well combined. Spoon
    chocolate batter alternately with plain batter into an
    8 1/2 X4 1/2 inch loaf pan coated with cooking spray.
    Swirl batters together using knife. Bake 1 hour and 15
    minutes or until wooden pick inserted in center comes
    out clean. Cool 10 minutes in pan on a wire rack:
    remove from pan and cool completely.
    Yield: 1 loaf; 16 slices

    This is a really great cake and freezes well.

    BETTY FORD’S BLUEBERRY-BANANA LOAF
    From: National Enquirer’s Celebrity Cookbook

    ½ cup butter, softened (I use ½ cup vegetable oil)
    1 cup granulated sugar
    2 large eggs
    2 large bananas, mashed (about 1 cup)
    1 tsp vanilla

    2 cups all-purpose flour (you may need 1 – 2 Tbsp
    more, depending on size of bananas)
    1 tsp baking powder
    1 tsp baking soda
    ¼ tsp salt
    1 tsp all-spice
    1 cup wild blueberries (if frozen, that on paper
    towels)

    Preheat oven to 325º. Grease a 9-1/2” x 5-1/2” metal
    loaf pan (the bottom and sides get too brown in a
    pyrex dish). Line bottom and sides with brown or wax
    paper and grease again.

    Cream together butter (or oil) and sugar
    Beat in eggs
    Mix in mashed bananas and vanilla
    Sift together flour, baking powder, baking soda, salt
    and all-spice. Add half of flour mix to batter.
    Fold in blueberries
    Mix in remaining flour mixture.
    Pour into prepared pan. Smooth top and spread up into
    corners.
    Bake 2/3 up in electric oven until completely cooked,
    1 – 1-1/2 hours.
    Allow to cool 10 minutes in pan on rack. Remove from
    pan. Cool completely at room temperature.
    Freezes well.

     I had a similar recipe,only with raisins.I have to find it.It was one of my other favorite recipes.The rum and the bananas taste very good.Renate

    I have a hard time keeping up to this board it moves
    so quickly.

    I copied the recipe for the Cheesy Potatoes, and the
    Banana Bread, I have a nice recipe for Date Nut Bread
    that I would like to share.

    DATE-NUT BREAD
    1 1/2 cups chopped dates
    3/4 cup boiling water
    1/4 cup Myers dark rum
    1/2 cup chopped nuts
    3/4 cup lightly packed brown sugar
    1 egg, beaten
    1/4 cup butter, melted
    1 tsp. vanilla
    2 cups white all purpose flour
    1/4 cup butter, melted
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    Preheat oven to 350F degrees.

    Combine dates, boiling water and rum.

    Leave dates to soak until mixture has cooled. Add
    nuts, sugar, egg, butter and vanilla. Combine
    remaining ingredients; add to date mixture. Stir just
    until well mixed.

    Pour into a greased 9x5" loaf pan.

    Bake 50-55 minutes.

    For the rum, I like to use Stroh rum from Austria, but
    any dark rum will do.

    Sour Cream Banana Cake with Caramel Frosting

    Cream and beat together until thick and fluffy:
    1/4 cup butter
    1 1/3 cups sugar
    2 eggs
    1 tsp. vanilla

    Sift together:
    2 cups unbleached flour
    1 tsp. baking powder
    1 tsp. soda
    3/4 tsp. salt

    Add dry ingredients to the creamed mixture alternately
    with:
    1 cup dairy sour cream

    Add:
    2 medium-ripe bananas (mashed)
    1/2 cup chopped nuts

    Stir briefly. Turn into a buttered baking pan, 13 x 9
    by 2 inches, and bake for 35 to 40 minutes in a
    pre-headed 350 degree oven. Test with a toothpick
    inserted into the center for doneness. Toothpick
    should feel dry to the touch.

    Caramel Frosting:
    1/2 cup butter
    1/2 cup brown sugar
    1/4 cup cream or evaporated milk

    When mixture boils (you will need to stir constantly),
    remove from heat and cool. When mixture is warm to the
    touch, add:
    2 1/4 cups powdered sugar
    1 tsp. vanilla

    Beat until smooth and spread on cake.

    This is my very favorite recipe for bread pudding, real comfort food - From TOH no less!

    Banana Bread Pudding
    4 c cubed day-old french bread,
    1/4 c butter melted
    3 eggs
    2 c milk
    1/2 c sugar
    2 tsp vanilla extract
    1/2 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/2 tsp salt
    1 c sliced firm bananas (1/4" peices)

    SAUCE
    3 tbsp butter
    2 tbsp sugar )
    1 tbsp cornstarch
    3/4 c milk
    1/4 c light corn syrup
    1 tsp vanilla

    Place bread cubes in greased 2 qt casserole, pour butter over and toss to coat. In med bowl whisk eggs add milk, sugar, vanilla, spices and salt. Stir in bananas. Pour over bread cubes stir to coat. Bake uncovered at 375 for 40 min or till a knife inserted near the center comes out clean.

    Meanwhile for sauce melt butter in small saucepan. Combine sugar and  cornstarch, add butter stir in milk and corn syrup. Cook and stir over med heat till mixture comes to a boil. Boil 1 min. Remove from heat. stir in vanilla. Serve warm sauce over warm pudding.

    I believe that could quite possibly be, one of the
    yummiest cookies I have seen! If you are bored with
    baking banana bread, give this recipe a shot!
    48 cookies (change servings and units)

    Ingredients

    3/4 cup firmly packed brown sugar
    3/4 cup butter
    2/3 cup mashed ripe banana
    1 large egg
    2 teaspoons fresh grated orange zest
    1/2 teaspoon vanilla extract
    2 cups all-purpose flour
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt

    ICED TOPPING
    2 tablespoons butter
    3 tablespoons firmly packed brown sugar
    3 tablespoons whipping cream
    1 cup powdered sugar
    1/2 teaspoon vanilla extract
    Directions
    1Heat oven to 350°.
    2In large mixing bowl, mix 3/4 cup brown sugar & 3/4
    cup butter.
    3Beat at medium speed, scraping your bowl often until
    mixture is creamy 1-2 minutes.
    4Add in the bananas, egg, orange zest & 1/2 tsp
    vanilla extract.
    5Continue beating batter until well mixed 1-2 minutes.

    6Reduce speed to low & add the flour, baking powder,
    baking soda & salt.
    7Beat until well mixed again, 1-2 minutes.
    8By round teaspoons, drop the dough 2-inches apart
    onto ungreased cookie sheets.
    9Bake 8-10 minutes or until edges have slightly
    browned.
    10On medium heat, melt 2 Tbsp butter in 1-quart
    saucepan, adding 3 Tbsp brown sugar & cream.
    11Continue to cook, while stirring occasionally until
    mix comes to a boil 1-2 minutes.
    12Remove from heat & add powdered sugar & remaining
    vanilla, beat until well mixed.
    13When cookies have cooled, frost them with
    Serving Size 1 cookies 20g

    This recipe is from my SIL's cookbook--The Wilson Farm
    Country Cookbook. It is really moist and delicious and
    a little different.

    CRANBERRY-BANANA BREAD

    Preheat oven to 350 and grease 9 x 5 in. loaf pan

    1/4 cup butter or margarine softened
    1 cup sugar
    2 eggs
    1/2 cup mashed banana
    1 cup coarsely chopped cranberries
    1/4 cup water
    1 tsp. vanilla
    1 3/4 cups flour
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda
    1 tsp salt
    1/2 tsp. cinnamon
    1/2 cup chopped nuts

    Cream butter and sugar in a large mixing bowl. Beat in
    the eggs with an electric mixer. Stir in the banana,
    cranberries, water, and vanilla. Sift the flour baking
    powder, baking soda, salt and cinnamon together and
    stir them into the batter. Add the chopped nuts. Pour
    into the prepared pan and bake at 350 for
    approximately 55 minutes.

     "This is a great dessert. You may substitute commercial caramel ice cream Topping for the dulce de leche for a quicker preparation, but the homemade dulce de leche is worth the work and time."

                INGREDIENTS         

    1 (14 ounce) can sweetened condensed milk
              1 cup graham cracker crumbs
              1/2 cup butter, melted
              4 bananas
              1 1/2 cups whipping cream
              2 tablespoons confectioners' sugar
              1 teaspoon vanilla extract

       DIRECTIONS

        1      To make dulce de leche, place the unopened can of sweetened condensed milk in a saucepan, and add enough water to cover half-way up the can. Place the saucepan over medium-high heat and bring to a boil. Cook for 3 hours, adding more water as necessary. Remove from heat and cool.
        2      Preheat oven to 350 degrees F (175 degrees C).
        3      Combine the graham cracker crumbs with the butter in a mixing bowl until evenly blended. Press the crumb mixture evenly into a 9 inch pie plate.
        4      Bake pie crust in preheated oven until lightly browned, 10-15 minutes. Remove from oven, and cool on a wire rack.
        5      Open the can of dulce de leche, and pour half, or about 3/4 cup, over the pie crust. Slice the bananas and arrange half in a layer over the dulce de leche filling. Pour the remaining dulce de leche over the bananas. Top with remaining banana slices.
        6      Pour the whipping cream into a mixing bowl, and beat until soft peaks form. Add the sugar and vanilla extract; continue beating until stiff peaks form. Spoon the whipped cream over the bananas. Chill at least 1 hour before serving.

      Banana Bread - Quick Bread for Machines

     "A quick banana bread for the bread machine. Use the DOUGH setting for mixing, then BAKE with the control set to light."

     Original recipe yield 1 - 1 pound loaf
     INGREDIENTS          

    2 cups all-purpose flour
              1 teaspoon baking powder
              1/2 teaspoon baking soda
              3/4 cup white sugar
              3 tablespoons vegetable oil
              2 eggs
              2 bananas, peeled and halved lengthwise

        DIRECTIONS

        1      Place ingredients in the pan of the bread machine.
        2      Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing. Smooth out the top of the loaf with the rubber spatula.
        3      Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is dough on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to assure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. Remove the bread to cool completely on a wire rack.

              1/4 cup coarsely chopped walnuts
              1 pint vanilla ice cream

         DIRECTIONS

        1      In a large, deep skillet over medium heat, melt butter. Stir in sugar, rum, vanilla and cinnamon. When mixture begins to bubble, place bananas and walnuts in pan. Cook until bananas are hot, 1 to 2 minutes. Serve at once over vanilla ice cream.

    INGREDIENTS           

    1 pound lean ground beef
              1 cup fresh bread crumbs
              1 tablespoon minced onion
              3/4 cup mashed banana
              1/2 teaspoon salt
              1/8 teaspoon ground black pepper
              1/4 teaspoon paprika
              1/2 teaspoon ground mustard   

    DIRECTIONS

        1      Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
        2      In a large bowl, combine ground beef, bread crumbs, onion, banana, salt, pepper, paprika and dry mustard until well mixed. Shape into a loaf and place in prepared pan.
        3      Bake in preheated oven 1 hour, or until no longer pink in the center.
