    Potato Bacon Corn Chowder ~~~ From our church cookbook!

    Potato Bacon Corn Chowder
    from Angelic Creations Made From Scratch

    1 lb bacon, chopped
    1/4 cup chopped green onion
    2 cups frozen hash browns, thawed
    1 cup water
    1 10 oz package frozen corn, thawed
    1 cup sour cream
    1 3/4 cup milk
    1/2 tsp salt
    dash pepper
    2 Tbs parsley flakes
    1 10 oz can cream of chicken soup

    Fry bacon in a skillet until almost crisp, pour off some of the fat. Add onion onion and saute 2-3 minutes.Combine bacon, onion, potatoes and water in a 3 qt. saucepan, bring to a boil, reduce heat and simmer covered for 15 minutes. Stir in corn, soup and sour cream. Add milk, salt, pepper and parsley gradually. Heat to serving temperture. Do not boil.

    Sounds yummy, M_Wolverine! Here's a variation that gets some zip from jalapeno pepper. (Click name to see the recipe.)

    Yum, JOhn. I see this in a rotation with your beef barley soup, my mom's vegetable beef soup, albondigas, ten minute chili, the Black Angus baked potato soup, stuffed pepper soup, and the colby corn chowder, kathy f1's broccoli and cheese soup and bethenys cauliflower ham chowder but not till it cools off a bit. This sounds absolutely wonderful. I'm with rosiepie, post more recipe from your church cookbook. It sounds like a really good one.

    Thank You. Wilted Flower There's something almost magical about potatoes, corn and bacon. I like the idea of the sour cream too.
