I do! When I have guests over, especially for a holiday meal, I like to socialize with them, rather than just being the chef. So I lots of appetizers, crudites, nibbles, call them what you like, ready when the guests arrive, to keep people from being too hungry or getting too tipsy, and dinner is a couple of hours later.
For parties which are sure to go late into the evening, like a Chanukah or Christmas Eve gathering, New Years' Eve, or 4th of July, I will probably serve only appetizers, drinks and dessert.
Chinese food? I'll serve 3 or 4 appetizers, a small main dish, and rice.
If I had the time to prep them, and if I could handle the calorie and sodium load, I would eat nothing but appetizers!
