Maple-glazed Sausage and Peach Oven Pancake
Ingredients:
1 tablespoon butter
2 eggs
1/2 cup milk
1/2 cup flour
1 tablespoon sugar
1/4 teaspoon baking powder
pinch of salt
8 oz. pkg. brown-and-serve sausage links
15 oz. can sliced peaches, drained
1/4 cup Maple Grove Farms of Vermont maple syrup
1/2 teaspoon nutmeg
Powdered sugar
Directions:
Preheat oven to 400 F. Place butter in 9-inch glass pie pan and place in oven to melt.
In a medium bowl, beat eggs until foamy. Add milk, flour, sugar, baking powder and salt; mix until smooth.
When butter is melted, swirl butter around bottom of pie plate to cover, then pour in egg batter. Bake for about 15 minutes or until puffed and golden brown.
Meanwhile, in a medium skillet, brown sausages according to package directions. Add peaches, Mapler Grove Farms maple syrup, and nutmeg; cook over medium heat, stirring frequently, until sausages are glazed.
To serve, pour sausage-peach mixture into center of pancake. Sprinkle with powdered sugar and serve immediately.
Makes 2 large servings.
