    I embellished a pea salad given to me in 1988 to make a healthy entree for hot summer days. Shrimp, cubed Spam, tuna fish or cubed cooked beef can be substituted for the mock seafood.

    My family requests this dish all year long as a salad or entree.

     I'd love to try this one.

    Can you please explain what the canned noodles are? Are they crispy or are they like cooked noodles?

    I have access to fresh rice noodles, and have dry rice noodles that can be made crisp, or soaked, and used that way....
