    Cheesecake Phyllo Cups

    Lorraine Chevalier of Merrimac, Massachusetts borrowed this recipe from a friend, whose husband is diabetic, and has been making the colorful cheesecake bites ever since. Topped with kiwifruit and mandarin oranges, they are just delicious.

    You should be able to find them in either Kroger or Meijer. I believe those 2 stores are in Ohio. Try the frozen food section.

    It isn't difficult to make your own phyllo shells and you can save a lot of money. Here's a link:

    It seems that something is missing from this recipe. How do you first prepare the Phyllo dough? Isn't it first pressed into cupcake pans and baked?

    I don't think anything is missing. The recipe calls for "2 packages (2.1 ounces each) frozen miniature phyllo shells, thawed" -- Phyllo shells are already formed and baked. All you do is fill them.

    When I'm in a hurry, I spoon some low fat yogurt in the mini phyllo shells, add a little fresh fruit to the plate and just a light drizzel of melted chocolate over everything. It looks so impressive but takes just minutes - and tastes great too.

    THIS WAS A GREAT TREAT BEING DIABETIC MYSELF. I FOUND PHYLLO CUPS AT MY LOCAL WALMART SUPERCENTER IN THE FROZEN SECTION. I LIVE IN NEW YORK.

    There is NO mention in the directions for the'Cheesecake

    phyllo cups' recipe above. It seems to me that the phyllo cups should be baked. Should they be?

    The Phyllo Cups are pre baked. You can also use pre made cheesecake filling.

    Does the nutritional information include the phyllo cups themselves?
