    Caramel Apple Cupcakes

Bring these extra-special cupcakes to your next bake sale and watch how quickly they disappear--if your family doesn't gobble them up first! Kids will go for the fun appearance and tasty toppings while adults will appreciate the moist spiced cake underneath.

these are good but not very easy to eat. I think they would be better with a caramel frosting instead of just plain sticky caramel.

The recipe made me a total of 36 regular-sized cupcakes - so be aware that you may end up with extras! This isn't a bad thing, though - they were delicious and a big hit with all! They are easier to make, I think, with an extra set of hands in the kitchen (one that prepares the apples while the other prepares the cake mix). I would also agree that the caramel was delicious but a tad messy. I made some with and without the pecans in the topping, which also seemed a good route for pleasing the entire office. I definitely plan to make these again!!

This was very good. I first of all made it in a cake pan instead of the cupcakes. I cut the caramels in half and drizzled it over the warm cake and then made a caramel icing. Wow, was it good. My husband really liked it. If I do it again I will also put the nuts in the cake batter along with the apples.

Me and my boyfriend made these cupcakes and loved them! They are a fun dessert! The only was we doubled the recipe and instead if getting 24 we had closer to 40. I'm not sure why but in case anyone wants to double it be cautious!

These cupcakes were yummy. Had one issue though, the next day the caramel topping seemed to have slid off the cupcakes and onto the plate. As one person put it it was like they were "bleeding" caramel. Maybe I should have refrigerated them?

    Re: Caramel Apple Cupcakes

I completely agree. These cupcakes were amazing when I had one right after frosting it. But the next morning the plate they were on was covered in caramel! So next time I make these I am going to search on google for a diferent caramel frosting. Would defiantly recommend making these, just please use a different frosting!
