    im sure this gets old..but....

    im sure everyone has asked this once or twice and its gotta get  old, but im wondering what eveyones favorite ground beef/hamburger recipes are. i find myslef buying more and more of it because its cheap. but my creative juices are slowly not flowing. i would love to mmake meatloaves, i find so many great recipes but my boyfriend will not touch them. not even if they are stuffed with cheese and sliced meat.wel anyways i'd love to hear some of your favorites if you'll share...................................

    My family enjoys this casserole.

     

    Beef Noodle Bake

    1 lb. ground beef
    1 8oz. can tomato sauce
    1 tsp. salt (I use less)
    1/2 tsp. garlic powder
    1/4 tsp. pepper
    1 c. cottage cheese
    1 c. sour cream
    1/2 c. minced fresh chives (sliced green onions will work)
    8 oz. egg noodles, cooked and drained
    3/4 c. shredded cheddar cheese

    Brown ground beef; drain. Add tomato sauce, garlic powder, salt & pepper; bring to a boil. Reduce heat, cover and simmer for 5 minutes.Meanwhile, combine cottage cheese, sour cream and chives. Fold in noodles. In a greased baking dish, layer half of noodles and half of meat. Repeat. Cover and bake at 350 for 35 minutes. Uncover, sprinkle with cheese. Bake 5 more minutes, until cheese is melted.

     

    Another good and easy dish is meatballs and gravy. Super yummy comfort food over mashed potatoes, rice or noodles. I don't have a written recipe, I just make a basic meatball recipe-  ground beef, bread crumbs, egg and seasonings of your choice. Roll out the meatballs, not too big, and brown. Remove meatballs from pan, drain grease and add a can of cream of mushroom soup and half a can of milk. Whisk until smooth and bubbly, add meatballs back in and simmer , covered, for 1/2 an hour. Season with salt and pepper if desired, serve over mashed potatoes. I sprinkle with fresh chopped parsley if I have it handy.

     

    We also like meatball subs with provolone or mozzarella cheese, gound beef tacos, sloppy Joes... if I think of more I will add later.

     This is a very tasty ground beef recipe. Mix up a meatloaf type base with maybe 1 lb. H.B. Add about 1/4 can mushroom soup to the meat mixture. press into a pie plate and up the sides. Bake 350 about 25 min. Fill the meat with mashed potatoes and top with the rest of the mushroom soup. put grated cheese on that. Bake another maybe 10 min. It's really good. I got this recipe out of a magazine over 30 yrs. ago. It's called Souper Meat and Potatoe Pie.  Talk about a comfort food, it's delisch!!!

     I also have about 6 pounds of ground beef in the freezer and I'm getting tired of tacos and porcupines.  You  might like my porcupine recipe though- here it is: (I'm not home, so this will be sort of approximate- I'll double check it when I am home).  My DH really likes this- it is his favorite meal.

     

    Porcupines

     

    Mix together 1 pound of ground beef and 1/2 cup of rice-right out of the bag-not cooked.  Add in there 1 T worcestershire sauce, 1 T sugar, 1/2 t salt, 1/2 t pepper, 1/2 cup chopped white onion (or yellow), and 1 1/2 t garlic powder. Now I line my 9 X 11 baking dish with aluminum foil for easy clean up.  Now you want to make your mixture into 12 -15 equal sized balls.  I like to make them smaller so I usually get 15 or 16 out of it, while my mom likes hers bigger so she makes 12. Put those in the pan.

     

    In another bowl mix together 1 T sugar with 1 regular sized can of tomato sauce and 2 T worcestershire sauce.  Pour this over the balls-make sure you cover each one with some sauce.  

     

    Now pop that in the oven at 350 for about 30 minutes covered up (I cover it loosly with foil).  Take the foil off and cook it for 10-15 more minutes.

    Tonight I took browned hamburger meat added 2 cans cream of mushroom soup, a good 2-3 tablespoons sour cream, pepper and some cooked egg noodles.  Very good. Kind of like sweedish meatballs without all the fuss.  The kids and I always like this.

    Hamburger casserole

    Take 3/4 # ground beef - brown in skillet with onion.

    Place in casserole dish - add one can of mixed vegetables.  Add 3/4 cup of beef broth.  Cover with one can of biscuits.  Bake in 375 for about 20-35 minutes (depending on your oven). Enjoy

    Messy cheeseburgers.

    Brown 1-2 lbs hamburger,drain,add a can of Campbells cheddar cheese soup,stir well. Heat until hot.

    Tacos

    Chili

    mix it up with a box of mac n cheese

    oooh meatballs,i havent had meat balls since i met him. i used to make them like you stated with mashed potatoes and gravy. i guess i never thought about meatballs, i guess because of how enthusiastic he is about meatloaf. i should try those procupine ones he absolutely loves rice. what do you sere them with though? im definately making that peat and potatoe pie, it sounds interesting! i once made a grounf beef wellington that i thought was excellent. he ate two pieces and said it was just like meatloaf.i dont know what his thing is with meat loaf.lol!

    • BBQ beef cups or BBQ bean bake--- tons of recipes floating out there both use canned biscuits
    • meatloaf
    • salsbury steak
    • grilled hamburgers (my DH likes to top with diced green chilies right before he melts the cheese)
    • spaghetti  with meat sauce

     When I make the porcupines, my DH wants mashed potatoes with them and I normally make sweet peas with them as well as salad.  Big Smile

    Hope you can use this recipe, it is a favorite of my family. We are from Lebanon & this meat recipe can be used by itself w/ mashed potatoes, french fries & veggies, over rice in a casserole. Hope you enjoy:

    Kafta:

    2 lbs of ground beef

    2 cups  Italian Parsley (flat leaf), finely chopped

    2 yellow onions, finely chopped

    3 Tbs. tomato paste

    1Tbs. Ground Allspice

    1/2 Tbs. Ground Cinnamon

    to taste salt & black pepper

     Mix all above ingredients in a bowl, (allspice, cinnamon, S & Blk Pepper can be increased or reduced according to your taste)shape Kafta into a patty or any shape you want. Place on a rack w/ a dripping pan under it to catch the grease falling from the meat. Broil each side for about 5 minutes or until done, depending on thickness of Kafta shape.

    If you want to serve it in a casserole over rice, simply shape Kafta into patty rounds, grill or broil bake them, peel potatoes & slice into rounds of 1/4 inch thick, layer into casserole pan, mix tomato paste into 2 cups of water until paste is dissolved & pour over Kafta, may need to add more water until kafta & potatoes are covered, place foil over casserole & bake @ 350 degrees for 20 minutes or until potatoes are tender. Make rice separaretly, when time to service, place rice on plate & spoon kafta w/ potatoes & sauce over rice. Enjoy.

    You can also serve it on  a humberger bun w/ fries & veggies for an all around meal. Hope this helps you.

    Sorry, forgot to add that the parsley, onions & tomato paste can also be reduced or increased according to your taste buds. You want the parsley to be seen in the meat patties. I also like to make this on the grill with portabella mushrooms, grilled zucchini, tomatoes slices with mashed potatoes & gravey. Hope you like this dish.

    Here's the recipe for my meatloaf and how I make hotdish.  A very dear elderly lady from church gave it to me. My whole family loves it and if I'm having a get-together it's the most requested meal.

    Meatloaf

    1 1/2 pound ground meat (any kind works well)

    1/4 cup chopped onion (I use more as I love onion)

    3/4 cup oatmeal

    1 cup tomato juice (I use tomato sauce and a little water)

    1 egg, beaten

    salt and pepper to taste

    In a large bowl, combine all either using your hands or a wooden spoon. Pour into a ungreased bread pan. Combine 1/3 cup catsup, 1 tsp prepared mustard and 2 Tbsp brown sugar or sucant and pour on top. Bake at 350 for 1 hour. Let sit 5 minutes and serve.

    As a change of pace, I've poured half of meat mixture in bread pan, made a indent down the middle, filled with mozzarella cheese, poured remaining half of meat mixture on top and instead of the catsup mixture, I top it with pizza sauce. Delish!

    Leftover meatloaf makes a wonderful hot dish.

    Hot Dish

    Aprox 2 cups cooked egg noodles (give or take depending on the amount of meat used

    1 10 oz can tomato sauce

    1 pint corn, drained (can use cream corn but don't rinse or drain)

    Left over meatloaf chopped up into smaller pieces

    season to taste.

    In a bowl, combine all. Place in greased 2 qt roasting pan or baking dish. Bake at 350 until hot and bubbly. You may need to adjust amount of tomato sauce and water depending how many noodles you use. I rarely measure any of it. If you don't have meatloaf, use a pound of ground meat (I really like ground venison).
