Put your thinking caps on - I need a Halloween dish to pass

It can be anything - should be kid friendly & portable.  Halloween party tonight (cold, windy, rainy, blah)

I cheat. I use sour cream not yogurt, (peel and seed the cukes), skip the pita and just throw it on my panini grill or even in a frying pan.

Pork Kabobs with Cucumber Yogurt Sauce (T&T) recipe
    Posted by bettyboop50 at recipegoldmine.com May 30, 2001

This recipe was sent to me by my sister who thought I would be interested in using for my catering. I have used it as an appetizer with wonderful results and great comments. I have made these on a portable grill when catering. I now make them on my George Foreman's grilling machine and they take no time at all and taste just super.

Make sure you use pork that has some fat in it. Boneless country style ribs work very well in this, but any well marbled cut of pork will work fine. If the pork is too lean it will dry out on the grill.

    1/2 cup olive oil
    1/4 cup chopped onion
    3 tablespoons fresh lemon juice
    1 tablespoon minced fresh parsley
    1 garlic clove, minced
    1/2 teaspoon salt
    1/2 teaspoon dried marjoram
    1/8 teaspoon pepper
2 pounds boneless pork, cut into 1-inch cube

    Cucumber Yogurt Sauce
1 (8 ounce) carton plain yogurt
    1/2 cup chopped cucumber
    1 tablespoon chopped onion
    1 tablespoon minced fresh parsley
    1 teaspoon lemon juice
    1/8 teaspoon garlic salt
    Pita bread, optional

In a resealable plastic bag or shallow non reactive container, combine oil, onion, lemon juice, parsley, garlic, salt, marjoram, and pepper, add pork cubes and toss to coat. Seal or cover and refrigerate overnight.

Combine sauce ingredients, cover and refrigerate for several hours.

Drain pork and discard marinade, When ready to cook on grill. Thread pork on skewers, leaving a space between each. Grill uncovered, over medium coals for 8 to 10 minutes or until meat is done, turning frequently.

Serve with dipping sauce if using as an appetizer or in pita bread with sauce drizzled over.

Edited to add Footsie Note: I rarely think of this in time to let it marinate for 8 hours. I usually manage around 2 hours lol, and it's still good.

Oh and I also usually cut up a boston butt.

This is always my first choice when I have to bring something for a crowd. It keeps well, doesn't have to stay hot and makes enough to feed the neighborhood.

Edited to add the recipe rofl!

    Dirty Rice

5 cups water, chicken or beef broth
2 packages Zatarain's Dirty Rice Mix*
    2 1/2 pounds ground round,
3 bunches chopped green onions, with tops
Minced garlic or garlic powder to taste
salt and pepper or cajun seasoning to taste

1 small finely chopped green pepper (I leave this out. Too many people don't like green pepper. It's never been missed)

    Crushed red pepper to taste
3 to 4 pounds spicy smoked sausage

Bring broth to a boil. Add dirty rice mix, stir; return to boil. Cover, reduce heat and simmer 20 minutes. Remove from heat and set aside for 20 minutes.

Pour cooked rice mix into very large bowl.

Brown ground round with onions, garlic, green pepper and crushed red pepper flakes and seasonings to taste. Do not drain.

Cut sausage into 1/2 inch slices and then again in half or into quarters. Brown and drain.

Mix all together in bowl with rice and let set at least 2 hours for flavors to blend in, then adjust seasonings to taste. Maybe reheated before serving if desired.

Serve as main dish, side dish or party munchie with crackers and hot sauce.

This fills a 2 gallon ziplock bag and freezes well.

Could always bring wings. Lord knows there's enough variations to please even the pickiest eater.

Oh and frankly, I would shy away from meatballs or weenies in sauce in a crockpot. Everyone brings those to every party cos they're a no brainer.

Sloppy Joes, pigs in blankets, chicken nuggets, fried chicken, pizza....trying to think what else "kid friendly" is usually on a school lunch menu!

Where did I see the picture of/recipe for Halloween pigs in blankets that looked like little wrapped mummies?  On this site???   Confused

Wings are an idea - I could bake them & then put them in a crock to keep them warm.  The mummy dogs are really cute - but this party is in a barn - I have access to electricity - so something crockish is possible - but otherwise - keeping something warm (& safe to eat) concerns me, LOL.

Summer, yeah in the banner. I think it's actually a Pillsbury recipe. Just wrap hot dogs or lil smokies in crescent roll dough and bake as usual.

I don't have banner ads displayed - I remember now that I saw the mummy dogs in a Pillsbury ad in a Sunday coupon insert.

Do you have to bring a main dish?  If food temp is a concern, you could bring pumpkin bars or cupcakes or something for dessert.  I saw an interesting recipe for pumpkin dinner rolls in a TOH annual cookbook the other day, too.

I'm sorry I don't have any good crock pot ideas....I'm the only person in the Western Hemisphere who doesn't use one of those gadgets.  Embarrassed

Don't be sorry Summer!  I go in crockpot streaks.  I really like my crockpot when I'm going to on the go all day or have to run right after dinner.  Makes life easy sometimes.

    Summer74:
    could bring pumpkin bars

I was actually thinking about making that pumpkin dump cake.  A cheat I know, but I'm feeling lazy today, LOL.
