This maybe the best recipe I ever made up completly on my on.I just love becuase there is so much room to expand and do with it as u like it.I have down to a science I have tried it a few different ways and this is the way I always eat it.Prep time is about 20 mins and so is cook time but its well worth it.Guess what????its healthy you will not feel guilty after this dinner!!
1.baby eggplant
2.linguine(u can use spaghetti but linguine is best)
3. 1/2 cup of thawed corn and peas
4.hand ful of clean cilantro
5.1/2 of red&green(or any color) bell pepper
6.10 pc's of thawed de-veined shrimp
7.3/4 cup mozzarela
8.2 cloves roughly minced garlic
9.pinches of curry powder,chili powder,salt,pepper,hot saucetble spooon butter
Now the cooking can begin!!!Make sure the pasta is cooking then get a frying pan and turn it on low heat(u don't want it to cook fast) but olive oil(to coat) and butter in the pan.
Then in goes shrimp,peppers and garlic,buy this time the pasta should be done.Drain 75% of the water and let the pasta rest.
After about 6mins of the shrimp,peppers and garlic cooking,put in the corn,peas and eggplant,chopped,cubbed.(because eggplant cooks so fast it MUST be the last thing put in)
After approx. 5mins of simmering put in the cilantro and began to season,to taste,lastly put a dab of hot sauce in.
After stirring ocasionally for about 8 mins put the pasta in and toss.
Finally top with mozzarela and enjoy!!!!
