    Lost Potatoes with velveeta recipe

    Can anyone please help??  I had a recipe for a great potato casserole that has been misplaced.  I remember that you sliced potatoes thin, and cooked them until tender with chopped onion.   A sauce with velveeta cheese was made and poured over the potatoes.  The potates were then  covered with more sliced velveeta,  sprinkled with paprika and baked.  It was very popular at church suppers.

    Cheesy Potato Casserole

    SERVINGS: 10

    CATEGORY: Side Dish

    METHOD: Baked

    TIME: Prep: 25 min. Bake: 50 min.

    Ingredients:

    • 9 medium potatoes (about 3 pounds)
    • 1 package (16 ounces) process cheese, cubed
    • 1 cup chopped onion
    • 2 cups mayonnaise
    • 1/2 pound bacon, cooked and crumbled, divided

    Directions:

    Cook potatoes in boiling salted water until tender. Drain and cool. Peel and cube potatoes; combine with cheese, onion, mayonnaise and half of the bacon in a large bowl. Spoon into a 13-in. x 9-in. baking dish. Sprinkle with remaining bacon. Bake, uncovered, at 350° for 50 minutes or until the top begins to brown. Yield: 10 servings.

    This isn't exactly what you are looking for, but it sure is good!

    HASHBROWN POTATO CASSEROLE

    This is similar to a recipe I saw by Candykisses but uses half cheddar cheese and half Velveeta. I have also made it with all cheddar cheese and it is also delicious!!!

    30 oz bag of shredded hashbrowns, thawed
    1 can cream of chicken soup, undiluted
    1 pt. sour cream
    1/4 cup butter
    1 small onion, diced
    8 oz. grated cheddar cheese
    8 oz. cubed Velveeta cheese

    Saute onion in butter. Combine all ingredients in a large bowl. Place in a greased 9x12x2 pan. Cover with foil and bake for 45 to 60 minutes at 350 degrees.

    **To really jazz it up, add this delicious topping:
    Crush 1 cup Pepperidge Farm stuffing mix and mix with 1/2 cup melted butter. Sprinkle on top of casserole and bake uncovered for 45-60 minutes.
    This is to die for good!!!!
