gardas:I used a julienne peeler to make the strips - not too hard but you waste the middle of the cuke. I ended up using 4 cukes to make a double recipe.

I've made these, too. My guests thought the presentation with the Cucumber Rolls was fun. I used the leftover cucumber in this recipe:
Salmon with Cucumber Sauce

1 cup chopped peeled cucumber
1/2 cup mayonnaise
1/2 cup sour cream
1-1/2 teaspoons lemon juice
1/4 teaspoon grated onion
1/4 teaspoon dill weed
1/8 teaspoon coarsely ground pepper
Dash salt
4 salmon fillets (6 ounces each)
For sauce, in a bowl, combine the first eight ingredients. Refrigerate
until serving. Broil salmon 4-6 in. from the heat for 10-15 minutes
or until fish flakes easily with a fork. Serve with cucumber sauce.
Yield: 4 servings (1-1/2 cups sauce).
