    Kathy I think just you and me are the only two on the face of the earth that hadn't tried this little recipe before LOL. I can vouch for it and the coconut and nuts are totally up to your taste.

    I like the sound of the different puddings and nut additions too, thank you. The pistachios sound real good and the vanilla pudding. I never thought that I would try pistachio pudding in this lifetime but never say never, age changes the taste buds at least mine have and for the better and it could be because I quit smoking 11 years ago too LOLHmm.

     Jan, what other canned fruit do you think would work with this instead of the pineapple?  I have been making this for years, but my dson has developed a severe pineapple allergy.....and I thought for a second- fruit cocktail, but alas, it has the pineapple, too.  Any ideas? 

    Anybody???

    lorith, my fist thought after reading this was fruit cocktail as well. I didn’t remember it having pineapple but checked and yup it’s there.
    If you used vanilla pudding instead of the pistachio I bet you could use sliced peaches and use sliced almonds instead of pecans and leave out the coconut. I think this has lot’s of possibilities. When your at the grocery store look at the canned fruits by the cocktail/pineapple and see what’s there and just add a pudding that goes? By the way I have seen recipes that say 20oz. Pineapple and some that say 8oz. Cans pineapple so it is versatile for the fruit. You could always measure out how much juice is in a 20oz. Can and use some other kind of juice and fresh fruit. Oh, my mind is whizzing here LOL.
    Hope that helps and if you try it please let me know. I have been on a healthy eating life style change since I lost 80 lbs. Since 3/08 so I try to carefully watch my desserts and replace the regular stuff with Sugar Free/ Fat Free Jell-O and Fat Free Cool Whip and it tastes just as good. I made the regular full sugar fat version for the 4th of July and while they all loved it I found it a bit heavier and actually prefer the SF FF version for me and so does my son.

    Good luck lorith and let me know if you find a good one please because I am open to trying lot’s of new summer sweet/savory salads.

    My friend Tammy in What’s Cookin posted this really good one too which is the same concept:

    Caramel Apple Salad

    Tammy called it Apple Salad but to me it tastes a bit like caramel apples so I call it that.

    1 (8-ounce) container frozen whipped topping, thawed
    1 (4-ounce) package instant butterscotch pudding mix (1oz. If SF FF)
    1 (20-ounce) can crushed pineapple with juice
    3 cups apples, diced (skin on or off as you choose)

    You can also add:
    1 cup dry roasted peanuts
    1 cup miniature marshmallows


    Mix cool whip, butterscotch pudding and crushed pineapple with juice. Add apples, roasted nuts and marshmallows.

    Keep in refrigerator until ready to serve. YUM!
