Low Carb Carrot Cake

    Low Carb Carrot Cake

      Carrot cake low carb

       

      1.2 cup almond flour
      2 tbs flax meal
      1 oz coconut ground
      2 oz hazel nut
      30 gr lindt dark 85% chocolate
      2tbs olive oil
      1 cup carrot ground
      3 medium eggs
      1oz cream cheese
      1 tbs honey
      1.5 tsp baking powder
      cinnemon
      ginger
      vanilla extract (optional)

    Directions

    1-In a food processor add all ingredients except chocolate and the hazel nut and blend well.

    2- In a different cup, crush the chocolate .

    3- Crush the hazel nuts separetly , in small pices.

    4- Add half the crushed hazel nuts to the blend.

    5- Pour the blend in greased pan and top it with the crushed dark chocolate and crushed hazel nuts.

    6- Bake in a 375 F oven for 45 min, or till a sharp object comes out clean.

    Number of Servings: 20

    Gm Twinkle ~ Coffee Wow look at all of that Fiber ~ While I don't have too many of these ingredients I will copy it.  Expect to see Chef, peek in ~  Take care sweetie and thanks for sharing ~  Janie ~ Was eyeballing one of your old recipes yesterday. Woman, I have to tell you they are stashed everywhere ~  Its for a Carrot and Zucchini Fritter and once again Push Cart Onion Sauce ~ Jumped out of the stash as well~.

     

    That is such a wonderful recipe I must bump it up for the 4th !~  Janie Wink

    Twinkle, that sounds wonderful. I don't suppose you know what size pan it is supposed to be baked in?

    Hi girls... i knew chefly would be here -lol i want to try it soon when the heat wave is over.. i have no idea about the pan size i think once i see the amount of batter i will eyeball and use something  -lol

     Alissa,

    I was thinking an 8" pan because there isn't much flour. I might make it today, but will finely shred the carrots not grind them. I don't have hazelnuts or Lindt chocolate at home either, so I'll either substitute or go to the store. 

    The roofers are here already and DH's cousin is coming around lunch time so I won't get to this until late this afternoon. I will write a review once I taste it.
