    Daily Low Carb Chat Weekend- July 3rd, 4th, 5th

    Good morning...let the Happy Holiday Dance begin!

    I thought I'd make this another 3 day thread, as many people are starting the holiday today...be sure to bookmark it so you can come back throughout the weekend! That is, unless you're doing fireworks and being generally rowdy! Wink Beer

    Today looks like another weather washout- but there seems to be hope for the weekend...Yes

    Alphy- nice to see you last night- I know you're in the neighborhood because I see you with the other flylady friends...and I always wave to you- even if you don't see me! Smile Thanks for the tip about the Flatout bread pizza, too! We sometimes use the l/c pita breads as a base, as they are fairly substantial, too. 8 gr. of carb is fine - so much less than bread...and much more satisfying!

    I know some of you will be away- or otherwise occupied this weekend, but if you get a chance to say hi, please do...

    I'm going to be looking up Wegman's Market, and Trader Joes before we head to NC next week. We might just have to stop for the night nearby...Embarrassed we don't have either of those wonderful stores near here- and they are shopping experiences! Party!!!

    I'll start this and come back later with a nice treat recipe.

    These are a nice, easy treat to have available- and good for you, too!

    Cinnamon Roasted Almonds

    1 egg white, lightly beaten with 1 tsp. cold water ( just use a fork)

    4 cups whole almonds- skin on, skin off- no difference

    1/2 cup Splenda granular

    1/4 tsp salt and 1/2 tsp. cinnamon

    In a mixing bowl,mix everything except the almonds, and stir. Then, dump the almonds in and coat them well with the mixture. Turn them out onto a  lightly sprayed baking sheet- or one lined with parchment paper- and spread them out.

    Bake at 250* for 1 hour- giving them a stir when you think of it.

    Remove from oven- allow to cool and store. When you have these sitting in a bowl, people will try them and love them!

    Gm Everyone ~  Rowdy~  Lol ~ Well maybe 40 some years ago~  I'd get the old pots and pans out and bang away ~  Can't remember when I last misbehaved~   Tons of work done yesterday ~  Our Garage has never looks so clean and our trash pile may have passing cars thinking ~  Wow, what a bunch of Red necks~  we literally ran out of room. 

     

    If it were up to me it could look like that every other week but Mr saves everything~ The tricks I have to do in order to sneak things into the trash.  He is impossible and will rumage through the bagged trash and will "Retrieve" items that I have thrown away.  Pieces of wood seems to be the worst, and don't even think that you can get away with throwing out old broken or worn out, crinkled hoses.    He is worse than Meadow Dog  as he will always claim,  I can fix that or someday we may need that. [;)  I have learned over the years to stash certain articles, till he leaves.  But yesterday he was very coporative and after a few threatning  LooksAngry he gave way ~

     

    Looks like our weather here is going to be great the whole weekend through.  And we plan on taking full advantage of it ~ It will be quiet and laid back.  Perhaps a game or two of Mexican Dominoes~  That is such fun.  Nothing Earth Shattering on the Menu, quite honestly there is no set menu, except for some Chicken wings and a few deviled eggs ~ I was thinking perhaps a mac salad, olive oil based.??  Speaking of olive oil.  I purchased 2 jars of Hellmans Mayonnaise~ Normally I buy Light or less fat ~  But several weeks ago I bought one of each.  Hellmans made with Olive Oil and Hellmans made with Canola Oil.  Made some tuna salad yesterday and used the Canola for the first time. It is much better that the Olive oil based.  It seems to be lighter and it has a more authentic taste to it.  Its very good.

    Margaret, that recipe sounds good, I frequently fix pecans or almonds, but have not used the splenda for them, so DH gets them on his salad, not me...but..from now on!

    If I told you about the roast I was doing yesterday, forget it!  It would be fine for a prime rib, but not for a tougher cut of meat.  we ate it, but it wasn't the best I have had.

    I had a Dr appointment yesterday, then went to the care center to watch fireworks with my friend there...I asked how they could have fireworks at 3:00 in the afternoon, and the director told me no one would be up when it was dark.  I think the patients enjoyed it...lots of fireworks.

    We have no plans for the weekend, but guess that's okay, too!

    Gm Alphy,  I have not had the pleasure of chatting with you before ~  Nice to meet you ~Coffee  Its going to be laid back and quiet here as well.  You are so right ~  Sometimes that works too !~  All one needs is the sun and a good seat !~ 

     

    M~  thanks for sharing your recipe I too have used Pecans and I think Chili powder ~??  It has been a while.  Nuts are such a great snack ~  We love the roasted elephant peanuts ~  and we used to order from The Peanut Shopped in Virginia. Every Holiday ~  Their peanuts are so good an I have never seem such fat Cashews ~  Janie

    Janie...your DH sounds a lot like me...Embarrassed  Between saving things from my past because I'm sentimental, and keeping things for the future because I will probably use it...the present  is too full of everything- and nothing in its place! I know that breaks the flylady code- I'm so bad...! The problem is, it's everywhere! Tongue Tied My heart is in the right place, but that's the only thing that is in the right place...

    Alphy- sorry the roast wasn't good. Maybe if there's anything left you could put it into the crockpot and make some beef soup...couldn't hurt to try!

    Good Morning,

     

    We got home late for us last night and were two whipped puppies. Jennie's new old car was having the air conditioning fixed so we drove an hour to pick them up and then another hour to get to the Dells and we would have met there otherwise and just been an hour drive. The boys had such a good time we did the Ducks which are old army vehicles that travel on land and water, then we set off for North Freedom and the train which is a full size train and we got there just in the nick of time to board. Colton was a very happy boy riding that train, Mason enjoyed it too and they got to go in the caboose and did a little climbing around in there. Haakon was even old enough to have a good time too and they all had fun at Tommy Bartletts Exploratory World. With lunch that took almost 12 hours. Today we may go to a craft and flea market  outside of that not much planned. Tomorrow Erica and Michelle are coming for supper and then we'll watch the fireworks on public access so we can be home woth fraidy dog Bailey so you can see how rowdy we will be . Party!!! 

     

    I guess I put off telling you the little angels Angel name long enough. It is Ellie Lyn, we were riding the train when we found out yesterday about 1:30. I think this was the compromise name but the Lyn is the middle name I gave all of my girls. I did that because it was the one thing they would keep that was the same as they married and I hoped it would help keep them close as sisters. I was kind of touched and I think Jenny really liked the idea too, I know Erica did.

     

    Alphie my granddaughter is the one that went to Luther and I hope she will not be thinking about having children for many years yet.Wink She has three years of school as yet and will need to return after working for a couple of years as a nurse to then become a nurse anesstatiss (sp) but who knows what will happen. She talks music again so I know nothing.

     

    Janie I have used Hellmans all of my life and do like the canola oil one. I usually go for the gusto and use the original but canola was just fine I did not notice a taste difference. We bought the weed killer and Roger sprayed some right before we left yesterday but I forgot to look to see if there were any changes as yet. It came in a brown bottle is that what you use? The poor dogs are itching terrible too.

     

    Margaret your trip is coming up fast, you are driving arent you? A couple of years ago I got to go to Trader Joes when we were in Calif. and I loved that store but have never been to a Wegmans. Years ago I went to Stew Lenard's grocery in Conn. that was an experience for sure. I am hoping you are done with all of the storms for a while.

     

    I have a holiday recipe for you. L/C yougurt could be used and it should fit in very well.

     

    I hope to be back later and will wish you all a happy 4th now just in case you are off and running for the weekend. Sorry I missed you Barb.

    Red, White and Blue Parfaits

    8 oz. cream cheese, softened
    1 16-oz. container vanilla yogurt (L/C yogurt)
    2 Tbsp. lemon juice
    2 pints fresh strawberries, washed, hulled and sliced
    2 pints fresh blueberries, washed
    Whipped topping for garnish
    8 parfait glasses or other clear glasses

    Combine cream cheese, vanilla yogurt and lemon juice and mix well. Place one quarter cup of cream cheese mixture in the bottom of each glass followed by one quarter cup strawberries. Repeat with cream cheese mixture and blueberries. Top with whipped topping and serve. These desserts are tasty, colorful and right in keeping with the red, white and blue holiday. You could add a layer of sponge cake in each glass if you want to make the dessert a little more hearty.

    Now I know why I don't check this post frequently...I tried for a half hour to get it to come up to reply on my computer, and finally shut the computer down and started it again.  I am NOT that patient!

    I have copied both of those recipes, and I don't usually save recipes...I guess I mostly wing it with the low carb.

    M. you and I think alike...I had decided I was going to put that leftover roast in the little crockpot, just to tender up for our evening meal...I will pour a bit of wine on it.  taught me a lesson, for sure...I didn't save that recipe.

    I, too, am a saver, and Oh, I try not to be.  You would be the perfect candidate for flylady...come join us.  It has helped me, I am not great, but better.

    I have cheeseburger soup in the crockpot...I have a friend with advanced Parkinson's, and she said the other night her husband is doing the cooking.  It makes such a big recipe I thought I would share..also have French bread in the bread machine, must be about ready.

    Good morning! Happy Fourth of July!

    Well, the day looks a little brighter today- we've had such rain....my friend has 4' of water and mud in her basement- meaning she's lost her furnace, sump pump and anything else she had there. Her property is all underwater, too...they are near a lake, and got 3" of rain in one day- and the troubles got worse  from there...

    Carol- I loved the story about the middle names for your girls- and that this sweet new baby continues the tradition! I hope you'll have a chance to sit down and rest this weekend!

    I think you all saw the notice from Pattie's husband- I know she must have just recently gotten out of school- don't know if this was scheduled surgery or not- poor dear!  ((Pattie))

    Janie- I read your dip reviews...yum! Thanks for continuing to find, test and review so many recipes that show up on this board!

    Hope you all have great plans for the day ~  We will be working a 1/2 a day then its kick back time ~  Our Gs will be down again this weekend and the paintinfg will continue as well as a little more weed wacking ~  Going to hit the weeds again with the Roundup~ Carol our's is in a plastic white bottle. But as long as it says Roundup you have the right stuff~ Love the new Babies name ~ Very cute. We did the same thing with the middle name. Only with the boys ~ 4  generations have the middle name James. Starting with my fil to hubby to our son and to his sons ~ my Grand daughter has my greatgrandmothers name Of Brooke and her Middle name is my Maiden name Hamilton~ Funny how names goes around ~  I have been very fortunate in having my daughter in laws namesake their children after me ~ I also have another Gd that has my middle name which is part of  my Fathers first name ~ Carla~  lol~  Just a little more about this old Appy_ Girl

     

    How sad M for all of the damage to your friends basement~ Not only a mess but such a loss. The rain in our area has subsided some and we have actually had to run our sprinklers.  There were quite a few bare areas that we reseeded so they need to be kept moist.

     

    Think I'll make some cold Mac Salad today ~ I actually was thinking dare I make Potato Salad, They remembered the Broom is always charged up ~  Dave, can't help to think of Harry Potter ~  Boy did we ever enjoy those movies ~  Great entertainment ~

     

    Last nights treat wes just that a wee treat ~ I made 2 of Bettys Jack Pepper Sticks ~ They are coated with crushed Cornflakes, then fried.  Very, very good ~ I had a regular Mozz and Mr had the Hot stuff ~  Extremely crunchy and a little hit of nut/corn ~  very, very nice.  I have seen recipes before using that cereal as a coating for foods. Including fish ~ as well as Chicken ~

    HAPPY  4TH OF JULY !!!!

     

    Janie what a nice tradition of names in your family. Little Miss Ellie has not slept thru the night since her grandmas were there to visit and I was told the doctor said it was our fault. Judy (other GM)held her for three hours I guess and I had had her for about 45 minutes & Erica maybe 30 so our side of the family was not as bad as daddy's.Wink I think they better get use to it because this may not be the GP's fault but just how things will be.

     

    Roger said that it looks like the weeds are enjoying the Roundup he thinks they look healthier. Sad We have very tenatious weeds. I'm sure we have used the white bottle before too and then we got something that they use on the cranberry marsh and we still have mega weeds. If this doesn't work I think I'll try some straight bleach and see what that does along the fence.

     

    Margaret it is such a shame about your friends basement, bad enough to have water but the mud adds insult to injury. I remember it rained so hard the summer after my dad died that our basement in the apartment building flooded and my mothers ringer washer was floating around for days.

     

    Erica and Michelle will be here for supper and I have burger thawed, Erica is bringing deviled eggs and a red white and blue jello, Roger wants beans & brats and maybe I'll make a mac salad too and I want a couple of hot dogs on the grill too.

     

    (((Pattie))) I hope you are not in too much pain I know these back surgeries can be the pits. I wish you a speedy recovery and hope you will be back with us soon.

     

    Alphy it is so nice of you to share your soup when should I expect my bowl to arrive?Wink

     

    Well I was being so smart and opened a second window so I could go back and read the posts but I now know what has been missing since Roger had to change monitors and it is the place at the bottom of the screen that allows me to open those windows. Sometimes I wonder if this new computer will ever have all the bugs worked out.

    This is not a low carb recipe but it is so cute I wanted you to see it. It would be so cute for kids or a ladies lunch.

     

    Vanilla-Raspberry Sundaes with Spoon-Shaped Cookies

    Vanilla-Raspberry Sundaes with Spoon-Shaped Cookies
    The dough yields plenty of extra cookie "spoons," which can be served with tea or any dessert. If you'd prefer to bake a single batch, use one disk of dough and freeze the rest (up to one month).

    Ingredients

    Makes 8 sundaes and 60 cookies

    • FOR THE COOKIES
    • 2 cups sifted all-purpose flour, plus more for surface
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 4 ounces (1 stick) unsalted butter, softened
    • 1 cup sugar
    • 1 large egg
    • 1 teaspoon pure vanilla extract
    • FOR THE SUNDAES
    • 2 quarts Vanilla Ice Cream, softened
    • 2 quarts Raspberry Sorbet, softened
    • Blueberries, for garnish

    Directions

    1. Make the cookies: Whisk together flour, baking powder, and salt. Cream butter and sugar until pale and fluffy. Mix in egg and vanilla. Gradually add flour mixture, and mix until dough comes together. Shape dough into 2 disks, wrap each in plastic, and refrigerate at least 1 hour (or up to 2 days).
    2. Preheat oven to 325 degrees. Roll out 1 disk of dough to just less than an inch thick on a lightly floured surface. Using a paring knife, cut out spoon shapes, each about 3 inches long. Get the spoon template here.
    3. Transfer to baking sheets. Chill in freezer for 15 minutes. Roll out scraps, and repeat once.
    4. Bake until cookies are golden around the edges, about 12 minutes. Transfer sheets to wire racks to cool. Repeat with remaining dough.
    5. Make the sundaes: In 8 small bowls, layer 1/4 cup ice cream, 1/2 cup sorbet, and another 1/4 cup ice cream. Garnish each sundae with blueberries, and serve with 2 or 3 cookie spoons.
