    Quick Fix ~ Congo Bars

    Wow, Came across this one yesterday ~ Its from a 1992 edition of Womans Day Magazine .  Sounds really simple and is full of all kinds of good stuff ~   Janie  ~

     

    Congo Bars

     

    Ingredients

     

    1/4 cup butter or margarine

     

    1-1/2 cups grham cracker crumbs

     

    1 can of sweetened condenswd milk

     

    1 cup chocolate chips

     

    1 cup flaked coconut

     

    1/2 cup chopped almonds

     

     

    Oven set at 350. Put the butter in a 13x9" baking pan and place it  in the oven to melt.  Remove and sprinkle with the graham cracker crumbs. Press down slightly into an even layer. Pour the sweetened condensed milk over all. Sprinkle with the remaining ingredients.

     

    Press down lightly to compact.  Bake for 25-30 minutes.  Cut into 24 squares.

    This sounds really good. I love coconut!

    I've made the one below and it's yummy too. Great for snacks and lunches.

     

    Congo Bars

    2 ¾ cups flour

    2 ½ teaspoons baking powder

    ½ teaspoon salt

    2/3 cup shortening, melted

    1 ½ cup sugar

    1 cup brown sugar

    1 teaspoon vanilla

    3 eggs

    ½ cup chopped walnuts

    1 (12 ounce) package chocolate chips

    Powdered sugar for dusting

     

    Mix flour, baking powder and salt in medium bowl and set aside. Melt shortening. Cool slightly. Beat in sugar, brown sugar, eggs and vanilla. Add flour mixture to sugar mixture. Stir in walnuts and chocolate chips. Press into greased 9 x 11 pan. Bake at 350 degrees F for 25 – 30 minutes. Cool in pan. When thoroughly cool, dust with powdered sugar. Cut into 2 x 2 squares. Store in well sealed container.

    Oh gosh....This recipe (where I live) is called 7 layers bayers.  The only differences is:

     

    1.  melt butter in microwave.  Mix with #2 and press in pan.

    2.  Only use 1 cup graham cracker crumbs

    3. (The 7th layer) 1 cup butterscotch chips

     

    otherwise it's the same recipe and talk about yummy! You can't go wrong with this one....

    These are sooo good.Always have the ingredients on hand.I use walnuts}.But I have`nt made them in a long time.:(
