    "Shortcut" Rosie's Southern Apple Crumble

    When I read Janie's review of Rosie's recipe I had every intention of making the apple filling per Rosie's recipe...but...then I got lazy.  The Betty Crocker Oatmeal Cookie Mix used as a topping was too much to resist trying.  So..I bought a container of Country Crock Cinnamon Apples - put them in an 8 x 8 glass casserole - made 1/2 of Rosie's topping recipe ( 1 1/2 c. cookie mix (about half the package), 1/2 stick melted butter and 1/4 c. finely chopped pecans) and sprinkled it on top of the apples.  Baked at 350º for about 25 minutes and oh boy was it good!  We had already eaten our Edy's Slow Churned vanilla ice cream for the week but I did have some cool whip to top it with warm from the oven.  Yum!  This topping is a must try.  Sweet and crunchy.  No disrespect to Rosie for this shortcut to her Southern Apple Crumble!

    Sorry I kind of ran it all together.  It was just so good I wanted to get it posted.  Looking forward to having it again tonight but it probably won't be as crunchy as when it was fresh made last night.  AND I like that it just makes a relatively small amount since there is just the two of us.  Hope you enjoy!
