    Cuban Coffee Recipe - Authentic Cafe Cubano

    (Instructions on how to make Cuban coffee)

     

    There are two methods to making coffee the Cuban way: the traditional method using a metal stovetop espresso pot, or with an electric espresso machine.  While the stovetop method takes longer, its certainly the authentic method, you can find a stovetop espresso maker at most online Cuban store websites.

     

    1. Using an espresso machine, add the desired amount of finely ground coffee, common Cuban style brands include Bustelo, Pilon and La LLave (I'm partial to Bustelo supreme, I buy the Cuban brands online from the Cuban Food Market).  You can also purchase fresh whole coffee beans from supermarkets like Albertson's or Whole Foods, any of the very dark roast Colombian brands will work best for Cuban coffee. I myself grind whole beans there at the store so that it is fine, fresh and ready to be made (espresso grind setting).  Do NOT store your ground coffee in a freezer, but do keep it in a cool place away from sunlight.  If you insist on drinking real Cuban coffee, only one site online sells it (pictured at the bottom of this page with a link). 


    2. For every demitasse cup of coffee you plan on making, use a teaspoon of sugar. The key to Cuban coffee is that it be very sweet. The trick here is to put the sugar into the glass carafe before you even brew the coffee.

    3. Brew the coffee just as you would an espresso. The coffee will pour over the sugar in the carafe as it begins to brew. After it is finished filling the carafe, stir it briskly as there will still be a little undissolved sugar. Pour the coffee into several demitasse cups and enjoy.

    * For Cafe con Leche, simply use 2 parts Cuban Coffee to 1 part steamed milk.

     

    * You can find small demitasse cups online, click here and then click on "other favorites" to see Cuban cups available on the web.  To not drink Cuban coffee from a demitasse cup is to leave out one of the best parts of the experience.

     

    * I get emails from people who want to know why Cuban coffee has earned its reputation.  Between Cuba's natural humid climate, fertile soil and two centuries of cultivation techniques, you have an ideal setting for growing coffee beans.

    Tigre Volador cocktail recipe

     

    1 1/2 ounce dark rum

    1 ounce dry gin

    1 tsp grenadine

     

    Mix well, serve over ice in a cocktail glass

    Achiote Marinated Baby Chickens Stuffed with Chorizo and Mustard Greens recipe

    1 package achiote paste
    1/2 cup olive oil
    1 teaspoon toasted cumin
    1 teaspoon ground coriander
    1 teaspoon Mexican oregano
    2 Poussins or baby chickens
    4 large links of hard dried Spanish chorizo
    1 Spanish onion, diced
    5 tablespoons garlic, chopped
    1 bunch mustard greens, cleaned, trimmed and roughly chopped
    1/2 cup chicken stock
    1 Idaho potato, peeled, diced and blanched
    2 tablespoons green olives, sliced
    Salt and pepper

    Combine in a food processor achiote paste, olive oil, cumin, coriander, oregano and the 1 tablespoon of garlic. Make sure to puree all these ingredients until it becomes a paste. Rub the marinade inside the chicken cavities, underneath the skin, as well as, outside. Allow the chickens to marinade overnight, refrigerated.

    Next day, heat up a large saute pan. Add chorizo and cook for 5 minutes, until crispy, then add onion and 4 tablespoons of garlic and cook for another 2 minutes. Add mustard greens and deglaze with chicken stock. Cook for 2 minutes until greens have wilted, then add potato, green olives and season to taste with salt and pepper. Once the stuffing has cooled distribute it equally into the chickens and place them on a sheet with a rack. Place in a preheated 375 degree oven for 1 hour.

    Yield: 4 servings
    Cooking Time: 1 hours 15 minutes

    Costillitas (Cuban Style Baby Back Ribs recipe)

    6-8 lb lean baby back pork ribs
    8 Cloves of garlic
    Juice of 3 large lemons
    1/4 tsp. ground oregano
    1 cup sour orange juice
    (Or 1 Cup of Orange Juice with the juice of 1 large lime ( I use 1/2 & 1/2 of each)
    5 tsp of salt
    2 teaspoon of olive oil

    Cut the ribs in 5 to 7 inches sections. Wash well under faucet and dry thoroughly with paper towel. Smash the garlic cloves in a mortar or garlic press.

    Mix the sour orange juice, lime juice, oregano, garlic, olive oil and 1/ 2 teaspoon of salt. Set aside about 1/2 cup of this mix ( the marinating sauce) to be used when serving. Place ribs in a large non-metal container and pour the rest of mix over the ribs. Rub the remaining salt thoroughly on all surfaces of the ribs. Place in the refrigerator and let stand for 2 to 3 hours.

    Set you gas or charcoal grill to low and place ribs so that they are not exposed to direct flame. Cook slowly for about 30 - 45 minutes. Time will depend on the temperature of the your grill . (Cook very slowly to insure tenderness). Turn ribs once or twice while cooking. Once they are cooked, increase the heat to high or in the case of a charcoal grill place ribs over direct high charcoal heat in order to brown. Turn as needed to brown both sides well.

    Serve with black beans and rice!!

    Preheat oven to 350=B0. In a medium-size skillet over low heat, heat the oil until it is fragrant, then cook the onion, bell pepper, and garlic, stirring, until tender, 8 to 10 minutes. Add the tomatoes, pimientos, and sherry, cook until thickened, 15 minutes, and season with salt and pepper.


    Lightly oil 4 ramekins or au gratin dishes and divide the sauce among them. For each dish, break two eggs into a saucer, slide them on top of the tomato mixture, and drizzle with 1 tablespoon melted butter.


    Bake until the whites are set and the yolks are still soft, 10 to 12 minutes. Sprinkle with salt, pepper, and parsley, and serve immediately from the baking dishes. (Place each on a serving plate, to protect the table).

    hello ladies

    thanks for your well wishes.. yeah what happed to 24h flues - they only go to my son - that lucky boy...lol i hade some jewish penecillin and crackers for days and that seemed to help...oh well nothing one can do...

    how is everybody else doing?

    we have coolish sunny weather - went to the farmers market today and they caught a pickpocket - a man shouted stop the thief stop that man - and thank god just before DS and i they threw that young guy to the ground and 3 men hat to sit on him and hold him tight otherwise he would have escaped - the police that was thank god not far came and took him away... he had about stolen some wallets and mobile phones from handbag from farmers market shoppers... that was the excitment of today... i got some fresh peas that i have to peel later and some san marzano tomatos - fresh - i will make a big pot of marinara sauce and freeze some... yesterday was the last day of shool so DS is on vaccation now....

    hello girls. I've enjoyed the recipe so far. Glad that everyone was able to add some because they look great and I haven't had a chance to look for any. I haven't been doing so well. Yesterday I passed a clot and still have some bleeding. No pain or cramping but the doc has ordered me off my feet at least until my appointment on Tues. Please say a prayer. I'm nervous with this being the first pregnancy. Everything is new, every feeling, every emotion, every worry. I called my friend who is a nurse practioner and she saidgo to bed and stay there for three days. She tells it to me like it needs to be told and that is exactly what I want and need.     Wow Piccaso you've been a busy girl!

    That is quite a bit of excitement Alissa, lol on the Jewish penicillin.  I never heard that before so I googled it hah.

     

    Take it easy there Shannon and follow doctors orders.  Praying that everything turns out okay for you. 

     

    It is overcast and cool here again today.  I am getting pretty sick of this rain.

    Alissa - Glad you are feeling better.  I have heard of Jewish penicillan before, but not for a very long time.  That is quite the excitement you had and a reminder to be very careful of your possessions when you are shopping.

    i am so glad you were so busy Picasso otherwise we would have been lost without you picasso - thanks so much for your hard work... with renate on her was back to st. louis and everybody else being not well or busy we get buried...

    Shannon please please stay in bed and keep low - i know this is scary but rest and stay put is the best you can do now... i will be praying for you!! i hope your family takes good care of you as you always did with them and treat you like a princess....

    We got back late last night. I hate to be back in this humid and hot place and sleep with AC again. Now I only can dream about sleping with an open window.I have to unpack and coming down from an 7 000 feet altitude to sea level makes you feel strange and confused. ==But anyway,Picasso they declared you as an honorable Cuban citizien.     Glad to see you back Renate.  Sorry you have to be air conditioned again.  I just hate being trapped by a/c.  Luckily this summer has been so nice so far that it has not been an issue.
