Help!! Question About Freezing Homemade Pizza Dough

    Help!! Question About Freezing Homemade Pizza Dough

    I need to make several pizzas for a get-together this week and I'm going to be using Maddymoo's pizza crust recipe (done in the breadmaker).  Can I make these crusts ahead of time and freeze them? 

    If so, do I roll them out on the pan, bake them and then freeze them or do I roll them out on the pan, freeze them and then bake them later?  

    Should the toppings be put on the crusts before they're frozen?  If not, do I need to thaw the crusts first and then add the toppings? 

    I'll be rolling these crusts out on a jelly roll pan - any idea as to how long these will take to thaw out IF I need to let them thaw before adding the toppings or baking? 

    I'm sorry for all of the questions, but I've never done it this way before and I'm desperate for some answers!

    When I make pizza dough it's enough for 2 of my large pizza pans.  After I take it out of the bread machine I let it rise as directed by the recipe.  Then I cut the dough in half and put one in a ziplock bag and freeze.  The recipe said to let it defrost in the fridge overnight, but I also took it out of the freezer the same day I was going to use it and left it out till it defrosted, probably a couple of hours. 

     

    But if you're going to make a lot of pizzas you can make up the pizza as usual and freeze the whole thing.  After all, that's how you can buy frozen pizzas in the stores.  I like just freezing the dough alone because I like to bake the dough with nothing on it for about 5 minutes and then add all the stuff and bake again.  But it probably would be too much trouble when making a lot.

    If you want them rolled out, so all you have to do is top them and bake them - I would parbake them.  Just bake them for 1/2 to 2/3's of the time - so that they are set but not brown.  Then freeze them.  I would thaw them before I topped them and baked them.

     

    Otherwise - I would freeze balls of dough, thaw them in the fridge overnight and then bring them to room temp before pushing them out in the pan.

     Thank you!  I'm going to freeze a dough ball today and then we'll have pizza tomorrow night for supper just so I can see how this all works!
