    R, R &P: Chocolate Peanut Butter Balls. Yum!

     I just made these and they look just like the picture and taste very good. DS proclaimed them Delicious!

    This is a great way to eat oatmeal and it is low on the glycemic index if you use agave syrup. Honey could be substituted if you don't have agave. They are sweet but not super sweet. This is a great way to indulge without the guilt. BTW, I love the healthytastychow blog where this recipe came from. I copied a number of recipes to try from this blog.

    Chocolate Peanut Butter Balls

    Mmmmmm.  They melt in your mouth.  I didn’t have any crispy rice cereal today so I decided to throw what I had together and I must say…  this time, it worked!  Usually peanut butter balls are made with either powdered sugar or graham cracker crust.  As usual, I wanted to make something a little healthier that I can give to my son without feeling overly guilty.  These are not as sweet as the traditional peanut butter balls and have a slightly different texture…plus, I wanted an excuse to work with coconut flour.  Basically, they’re not grandmas!  If you feel like healthier grandma’s pb balls…well, I may just work on a sweeter healthied up version in the future.

    Ingredients:

        * 1/2 cup creamy peanut butter of your choice
        * 1/4 cup crunchy peanut butter of your choice
        * 1/4 cup agave nectar
        * 1 cup oat flour, you can grind your own oats or you can even grind half and use half oats or all oats
        * 1/3 cup coconut flour – you can also use shredded low-moisture un-sweetened coconut and grind it (I ground my own~chefly)

        * 3/4 cup chocolate chips (80% cocoa~chefly)
        * 1 tsp coconut oil
    (1 added 2 tbsp. water for a moister dough~chefly)

    Directions:

        * Mix peanut butters, agave nectar, oat flour and coconut flour until it forms a dough-like consistency.  Add more peanut butter or flour to get the right consistency.  Roll into balls – size of your choice and put on foil.  Melt the chocolate chips with coconut oil – if you want to have the Peanut Butter Balls completely covered with chocolate, double the chocolate and coconut oil.  To not completely cover the balls, use a table spoon and drizzle chocolate on each ball  until you get the amount of coverage you’d like.  To completely cover them, throw the balls in the chocolate and remove with spoon- cool on foil.  Refrigerate if your house is hot but let warm up a bit before eating.

    The balls have a strong coconut flavor until they are chilled. Chefly

    Hi Chef, I bet dh would really like these too. But I have a few questions. I have oat bran which is fairly powdery, could I use that? And no coconut flour, any other suggestions? We both love peanut butter chocolate combinations.

    Just use 1-1/3 cups oat bran. If you want the balls to be real smooth you could run them through the blender to make them finer if they aren't as fine as flour.

    DD had one too and she liked them so they get a thumbs up from all of us.

     Jill,

    I should have said that I used unsweetened coconut flakes and ran them in the blender until they turned to powder. If you have coconut you could do the same, even if it was sweetened.

    I was hoping you would see this. They are very good and very easy.

    If you want them sweeter you could increase the honey/agave instead of adding extra water. Just make it moist enough to form into balls without being sticky. The oats do absorb a little moisture. I let the dough sit for a few minutes before I rolled them into balls to make sure the oats wouldn't absorb any additional liquid. I liked the sweetness just the way it was, but I don't like real sweet desserts.
