    R & R Jenni's Bow Tie Artichoke Salad

     I made this recipe up because I wanted to take something special to a barbecue at our good friends' house today.

    Bow Tie Artichoke Salad

    1 box or bag uncooked bow tie pasta

    1 basket or container grape or cherry tomatoes

    1/2 cup sliced ripe olives 

    2 jars (4+1/2 oz each) marinated artichoke hearts, drained

    1/4 cup freeze dried basil ( I don't see why regular dry basil won't work)

    1/3 cup sunflower seeds

    Cook pasta according to package directions. Drain pasta and rinse in cold water. In a large bowl combine the pasta, tomatoes, olives, artichokes, sunflower seeds and lastly the basil.

    Dressing

    2/3 cup olive oil

    1/3 cup balsamic vinegar

    3 tbsp lemon juice

    1+1/2 tsp sugar

    1 tsp white pepper

    Put all ingredients in a jar with a lid or any other shaker type container. Shake well. Pour over salad ingredients and toss til all is coated. Cover and refrigerate. Serve very cold.

    12 servings

     This was a big hit. The hostesses asked if they could keep what was left. The recipes I write in a few minutes time seem to go over the best.

    That sounds marvelous! I love the combination of artichokes and sunflower seeds.
