    old fashion pimento cheese recipe

    I have a 77 year old friend looking for a recipe for Pimento cheese that her grandma made for her when she was a child. It was made from scratch & the recipe had been handed down from her great grandma. Anyone happen to have a really old time recipe for it?

    Here's a recipe that I have.  My husband loved pimento cheese. 

    Old Fashioned Pimento Cheese

    1 tbs butter or margarine

    1 tbs plain flour

    2/3 cup evaporated milk

    1 tb vingear

    1 tsp sugar

    1 tsp dry mustard

    1 egg,lightly beaten

    1/2 pound American cheese grated

    1/2 pound Cheddar cheese,grated

    1 small jar of diced pimentos with juice

    1 tbs mayonnaise

    Salt to taste

    Heat butter in a sauce pan over medium heat until melted. Add flour and stir. Reduce heat to low and stir constantly and simmer about 1 minute. Mix together the milk, vinegar, sugar, and mustard and then slowly add to the thickened butter/flour while stirring. Take a spoon of this hot mixture and put in the bowl with the beaten egg. This prevents the egg from mixture, then you can pour the egg in with the base. Cook on low until the sauce mixture begins to thicken up. It will be thin. Remove from heat and add the grated cheeses and pimento and stir.  Add a little salt and stir that in. Refrigerate for several hours and then serve.

    I wonder about this: if you would pour the very hot mixture into small (half pint or pint)sterilized and HOT jars and seal immediately with hot canning lids if it would seal and keep for a few months......

    May  be worth a try with one test jar. If it does not seal, refrigerate and use like the rest. Mght be cheaper than buying a jar of pimento, hare quite xpensive here in small town ND.
