Steve Sabol's Meatloaf
1/4 cup carrots, finely chopped
1 cup celery, chopped
1 onion chopped
3 tblsps butter
1 1/2 lbs ground sirloin
3/4 lb ground pork
3/4 lb ground veal
1/2 cup fresh parsley, finely chopped
1/3 cup sour cream
1/2 cup bread crumbs
1/4 tsp dried thyme
1/4 tsp marjoram
salt and pepper to taste
1 egg
1 tblsp Worcestershire sauce
1/2 cup bottled chili sauce
2 slices bacon
Preheat oven to 350*. Oil an 8"X4" loaf pan
In a heavy skillet over medium heat, saute the carrots, celery and onion in butter until soft (about 5 minutes). Scrape into a large mixing bowl and cool.
When cool, combine the vegetables with the ground meats, parsley, sour cream, bread crumbs, thyme, marjoram, salt, and pepper. Whisk the egg with the Worcestershire and chili sauces, then add to the meat mixture. Using your hands, mix well. Form into loaf.
Place the meat loaf in the oiled loaf pan. top with the bacon slices and bake about 1 hour or until top is browned. Slice and serve.
