    Dump and Run Chicken (also under recipes)

     

    DUMP IT AND RUN CHICKEN

     

    Serves: 2

    Effort:  Easy

    Comments:  The original recipe came from a friend.  I tweaked it down some so it would work for just Jim and I.   This recipe is easy to enlarge and make for company.  Also, to reduce fat, use reduced fat cream of mushroom soup

     

    INGREDIENTS: 

    2 boneless, skinless, chicken breast

    1 small pkg. of fresh baby carrots

    1 can (13. 25 oz.) mushroom pieces, drained

    1 can  (10.5 oz.) cream of mushroom soup, undiluted

    cooked rice

     

    INSTRUCTIONS: 

    Layer ingredients in order listed into a crock-pot.  Season the chicken to your taste and salt & pepper the carrots.

    Cover and cook on high for 2 hours and then on low for 3 hours.

    Or cook on low for about 8 hours.

    Serve over rice.

     Are the carrots a 1 lb package or a snack package?

     I was wondering what I could use in place of the mushrooms. My kids dont care for them. Sad

     Sorry I'm just getting back to you.  Been out of town most of the day.

    You could leave the mushrooms out.   It would still taste very very good.

     I'm sorry, I didn't address that. 

    Corn would be good, would be very good.  If your bunch likes peas, I'd use frozen peas.
