    recipe

     I am unable to locate the recipe on page 68 through the recipe index.  Is there a way to do that?

    If you know the name of the recipe you will be able to find it. Or if you know some of the ingredients you can do a search that way but you will get many more recipes to go through.  If you are not a subscriber to one of the magazines you may have to ask for someone to post the recipe for you because some recipes are subscriber only.

    The name of the recipe is: Most egg-cellent breakfast strata and I have used all of those search engines provided on the website and I am still unable to locate the recipe.

    Well, that is really crazy.  I found where the recipe is mentioned here online but they don't have the recipe posted yet.  I am going to start a post on Recipes seeing if anyone has it. 

    If I get it I'll post it here.  It does sound like a recipe we would be interested in also.

    I thought perhaps I could find it but no luck as of yet.

     I have difficulty understanding how a full page recipe is not included on the website, but many other recipes are included.  I have given up searching for it.  Confused

    I'm sorry I couldn't find it either and I don't subscribe to Healthy Cooking, but a search of the internet reveals this one...from the Food Network...perhaps it is similar:

     

     

    Most Egg-cellent Breakfast Strata

    Layered breakfast strata with Italian sausage and veggies.

    Per serving: 245 calories, 11.4 g total fat (4.4 g saturated fat), 19 g protein, 17 g carbohydrate, 1.2 g fibre, 241 mg cholesterol, 607 mg sodium

     
     
     
    Ingredients:
    • 3 cups low-fat herb-seasoned croutons
    • 8 oz light mild Italian sausage
    • 1 cup diced zucchini
    • 1/2 cup minced onions
    • 1/2 cup diced red bell pepper
    • 1 cup packed shredded light old (sharp) cheddar cheese
    • 8 x omega-3 eggs
    • 1 cup 2% evaporated milk or light (5%) cream
    • 1/4 tsp salt and freshly ground black pepper

     

    Directions:
     
    1. Spray an 11 x 7-inch casserole dish with cooking spray. Spread croutons evenly in bottom of dish. Set aside.
    2. Spray a medium, non-stick skillet with cooking spray. Remove and discard casing from sausage. Break or cut sausage into small pieces and add to skillet. Cook over medium-high heat until no longer pink, breaking up any large pieces. Add zucchini, onions and red pepper. Reduce heat to medium. Cook and stir for about 3 more minutes, until vegetables begin to soften.
    3. To assemble strata, spoon sausage mixture evenly over croutons. Top with shredded cheese. Whisk together eggs, milk, salt and pepper in a medium bowl. Pour egg mixture evenly over sausage and vegetables. Let strata stand for 15 minutes while you preheat oven to 350°F.
    4. Bake, uncovered, for 40 minutes, until eggs are completely set. Let stand 5 minutes before serving.

    Karen, from what I can tell in looking at the recipe in HC magazine, it is the same except the magazine says to cook for 30-35 minutes.   Egg ingredient is worded as 8 eggs.   Other than that, it is one and the same recipe from Janet and Greta Podleski.

     went on a hunt...and finally found it....but sadly it says "recipe is only available in the magazine, page 68 Aug/Sept 09 issue"

     

    they say the zuchinni egg bake is similar...and there is a recipe for that...the recipe is in the 1400 calorie a day menus......and I don't have the magazine yet, so can't post it...

     

    editing to add: but after checking out the zuchinni recipe...NO bread...so it's not going to be the same....recipe looks good however....
