looking for a school elementary cafeteria ground beef n gravy with mashed potatoes recipe

Hi everybody, I used to work in an elementary school and they made the best ground beef n gravy with mashed potatoes. The ground beef was was tender and it had a light gravy, not thick but it was soooo good. It wasn't a thick white gravy, kind of clear and they served it over mashed potatoes. Anybody have an idea on how to make it, I would appreciate it sooo greatly. Thanks so much for sharing!

     Hi oohmamma!

I just googled "school cafeteria recipes" and a bunch of sites came up!  Maybe you can find your recipe in one of those.  Good Luck!

I have been searching for years for this recipe and for the chicken and gravy over mashed pototoes recipe as well.  Were you able to locate the beef n gravy recipe?  I have tried a few times to make it but it is just not the same.

I found and ordered a book from 1955 called '"School Lunch Menu Magic". It was used in school cafeteria's and even has pages designed to be pulled out.  If I locate the recipe you want in the book I will post it.  I can hardly wait for the book to get here.

     Ione

I forgot about the chicken and gravy over taters.  If you get that recipe in your book, I would love for you to post it.  That was one of my favorites!  Don't know how they cooked the chicken, but I loved it.

If it doesn't look like a white gravy then it wasn't made with four so I'm thinking the clear gravy was made with cornstarch. How about frying your hamburger with seasonings, onions & add some water or a cup of beef bouillon and then thicken with cornstarch. Mix some cornstarch with cold water and thicken your meat mixture.

Hi all,   I remember reading somewhere that the schools were given chicken in cans and they used that for their creamy chicken recipes.....It seems when I was in school everything was prepared by the wonderful cooks right from scratch.   I would be in study hall and I could smell the aroma of freshly baked cakes with 7 minute frosting and cookies too.   and a macaroni creole that was just mac and ground beef and a tomato sauce...so good....wish we could get those recipes too.    Shirley

I wonder if a recipe for a juicy burger type sandwich would be in your book-I graduated in 1955 and they served a sandwich called School Boy Sandwich.  It just tasted different that any of the Juicy burger or sloppy joes that I have tasted since.  I would just love to find that recipe so I can make them.  Thanks to anyone who might have it.  Also would you share where you ordered your book from.  I would love to order one.  Thanks, Anna

    School Boy Sandwiches Recipe #81087

I clipped this recipe from our local newspaper. It's easy to make and has a very good flavor.

    1¼ hours | 5 min prep

    SERVES 4 -6

    1. Cook ground beef and onion in a large skillet, over medium-high heat, stirring frequently, until meat is browned.
    2. Add chili powder or cumin.
    3. Add enough water to just cover meat.
    4. Reduce heat, cover and simmer 1 hour.
    5. Season to taste with salt.
    6. Stir in bread crumbs, a little at a time, until a serving consistency is reached.
    7. (Mixture should just begin to hold together, but still be fairly soupy.) Serve meat on buns.
