Chocolate Carrot Cake
1 cup grated carrots
1 cup brown sugar
1/2 cup oil
1 cup boiling water
1 1/4 cups wheat flour
1/2 cup cocoa
1 t. cinnamon
1 1/2 t. baking powder
Pinch of salt
Using a large bowl, mix carrot with sugar and oil and then pour boiling water
over the mixture. Stir and then set aside. Combine flour, cocoa, cinnamon,baking
powder and salt in another bowl. Sift this into the carrot mixture and stir
well. Grease an 8 inch cake pan and pour in mixture. Bake for 30 minute or so.
Leave in pan for 10 minutes and then turn out onto a rack to cool. Dust with
powdered sugar if desired.
