     German   -   Kartoffelpuree Meerrettich -Mashed Potatoes W/ Horseradish    
    Ingredients
        •     5 Potatoes -- Medium
        •     Pepper -- Freshly Ground
        •     -- Boiling Water
        •     1/2 Cup Sour Cream
        •     1/2 Teaspoon Salt
        •     1 Tablespoon Horseradish
        •     2 Tablespoons Butter
        •     2 Teaspoons Parsley -- Minced
    Directions
     Peel and quarter potatoes. Cook in boiling salted water in medium-size saucepan until tender, drain.
    Mash, adding 1 T butter and the pepper. Add sour cream, horseradish, and minced parsley. Whip as for mashed potatoes. Place in serving bowl; top with 1 T melted butter and serve.

       Bayrischer Gulasch (Bavarian Goulash)    adapted from German Cooking

    Description

    Ingredients
        •     2 Pounds New Potatoes -- Cooked
        •     4 Tablespoons Olive Oil
        •     2 Pounds Lean Beef -- Cubed
        •     2 Large Onion -- Chopped
        •     2 Medium Tomatoes -- Chopped
        •     1 1/2 Teaspoons Salt
        •     1/2 Teaspoon Pepper
        •     1 Clove Garlic -- Chopped
        •     1 Teaspoon Paprika
        •     1 Medium Bay Leaf
        •     2 Cups Beef Broth
        •     2 Tablespoons Flour
        •     1/4 Cup Red Wine
    Directions
     Saute beef in oil until well browned about 15 minutes. Add onions, saute for 5 minutes. Add tomatoes, salt, pepper, garlic, paprika and bay leaf. Stir in broth. Cover and simmer for 1 hour. Remove 1/4 cup beef broth, stir together with flour and add back to the pot. Simmer for 10 minutes. Add wine, simmer for 10 minutes. Serve over potatoes.

      Fasan In Wein (Pheasant In Wine)    adapted from German Cooking

    Description

    Ingredients
        •     1 Large Pheasant
        •     Salt And Pepper -- To Taste
        •     1/4 Cup Butter
        •     1 Tablespoon Olive Oil
        •     1 Medium Onion -- Chopped
        •     1 Medium Bay Leaf
        •     1 Cup Red Wine
        •     1/2 Cup Chicken Broth
        •     3 Slices Bacon
        •     1 Cup Mushroom -- Sliced
        •     1 Tablespoon Flour
        •     1/4 Cup Half And Half -- Optional
    Directions
     Rub pheasant inside and out with salt and pepper. Melt butter and add oil to it. Rub half of this mixture over the pheasant as well as inside. Then brown the pheasant in the remaining mixture until well browned. Add onion and bay leaf, saute for 10 minutes. Add wine and broth. Simmer for 10 minutes. Drape bacon over chicken and cover. Simmer for 30 minutes or until pheasant is done. Add mushrooms and flour, simmer for 5 minutes. Stir in half and half if using. Remove pheasant and carve. Spoon sauce over and serve.

     -   Backbarsch Mit Krauter (Perch With Herbs)    adapted from German Cooking

    Description

    Ingredients
        •     4 Large Perch Fillet
        •     Salt And Pepper -- To Taste
        •     6 Medium Bay Leaves -- Crumbled
        •     2 Tablespoons Sage -- Chopped
        •     2 Tablespoons Rosemary -- Chopped
        •     3 Tablespoons Butter
        •     1 Lemon Lemon Juice
        •     2 Tablespoons Olive Oil
        •     2 Tablespoons Parsley -- Chopped
    Directions
     Sprinkle fish with salt, pepper, bay leaves, sage and rosemary. Dot with butter. Sprinkle with lemon juice, olive oil and parsley. Bake for 10 minutes in 425 degree oven and serve.

       Erbsenpuree (Yellow Split-Pea Puree)    adapted from unknown

    Description
     
    Ingredients
        •     2 Cups Yellow Split-peas -- Dry
        •     6 Cups Stock, Broth -- Or Water
        •     1 Each Onion; Large -- Whole
        •     1 Each Carrot -- Large
        •     1 Each Turnip or Parsnip -- Large
        •     1/8 Teaspoon Marjoram -- Dried
        •     1/8 Teaspoon Thyme -- Dried
        •     1 Teaspoon Salt
        •     1 Each Onion; Small -- Minced
        •     2 Tablespoons Butter -- Melted
        •     2 Tablespoons Unbleached Flour
    Directions
     Presoak peas, if necessary, according to package directions. Drain well, if presoaked. In a large pot, add water or stock, whole onion, carrot, turnip or parsnip, marjoram, thyme, and salt. Cook until peas and vegetables are tender, about 1 1/2 to 2 hours. Drain well. Mash peas and vegetables in blender or press through a sieve. In a small frying pan, saute the minced onion in butter until lightly browned; blend in flour and cook about 2 minutes. Add to blended peas and vegetables. Beat until fluffy and serve hot.

       Braised Stuffed Beef Rolls    adapted from German Cooking

    Description

    Ingredients
        •     8 Slices Beef Round -- thinly sliced
        •     1 Medium Onion -- chopped
        •     3 Strips Bacon -- chopped
        •     1/4 Cup Flour
        •     1 Teaspoon Paprika
        •     1/2 Teaspoon Salt
        •     1/2 Teaspoon Pepper
        •     2 Tablespoons Olive Oil
        •     1 Medium Carrot -- chopped
        •     1 Stalk Celery -- chopped
        •     1 Medium Leek -- chopped
        •     1/4 Cup Parsley -- chopped
        •     1 Cup Hot Water
        •     1 Tablespoon Cornstarch
        •     2 Tablespoons Cold Water
    Directions
     divide onion and bacon among the 8 beef slices. placing them across one end. Roll up and secure with toothpick. dredge in flour paprika, salt and pepper. saute beef rolls in olive oil until brown on all sides. add vegatable and hot water. cover simmer, 2 hours. adding water if needed. remove rolls from heat and keep warm. add cornstarch and cold water to pan juices and cook until sauce has thickened. serve sauce over rolls.

      Rehschmortopf (Venison Casserole)    adapted from German Cooking

    Description

    Ingredients
        •     1/4 Pound Bacon -- Chopped
        •     3 Pounds Venison -- Cubed
        •     2 Tablespoons Flour
        •     2 Cups Beef Broth
        •     1/2 Cup Red Wine
        •     1/2 Cup Red Wine Vinegar
        •     1 Teaspoon Salt
        •     1/2 Teaspoon Pepper
        •     1 Medium Bay Leaf -- Crushed
        •     1 Clove Garlic -- Chopped
        •     2 Tablespoons Parsley -- Chopped
        •     1/2 Teaspoon Thyme
        •     2 Large Onion -- Chopped
        •     8 Ounces Mushroom -- Sliced
        •     1 Teaspoon Cornstarch -- Mixed With
        •     2 Tablespoons Water
    Directions
     Saute bacon until crisp. Add venison and brown all over. Add flour and allow the flour to brown slightly. Add broth, wine, and vinegar. Mix well. Add salt, pepper, bay leaf, garlic, parsley, thyme, and onions. Simmer on low heat for 1 hour. Add mushrooms and simmer for 20 minutes. Add cornstarch mixture and simmer until the sauce thickens. Serve with potatoes, noodles or rice.

      Mohnkuchen (Poppy Seed Cake)    adapted from German Cooking

    Description

    Ingredients
        •     2 1/2 Cups Poppy Seeds
        •     1/2 Cup Butter
        •     1 Cup Sugar
        •     1 Cup Flour
        •     2 Teaspoons Baking Powder
        •     4 Medium Eggs
        •     1/2 Teaspoon Almond Extract
    Directions
     Beat butter with sugar until creamy. Add flour and baking powder. Stir well. Add eggs and almond extract. Beat well. Add poppy seeds and pour into a 10 inch round pan. Bake for 1 hour at 350 degrees. Cool for 10 minutes and serve.

    Germanlady - its the little things that lift one up like nice old threads and a chat with people  - that takes i am away from worries, diseases and stress.. so i am glad the corner can be this for you and as Berny said the prayers that people send are so important and can make all the difference so we are all blessed to have friends and family that beleive in us and help us...as we are not alone in whatever it is

     

    Berny good that you saved all that before the board changed so much... i have read also quite a bit last night... did it stop to snow??

    My sister said there was nothing much going on for Halloween in the UK - little niece was dissapointed but she got a bit candy... now she is in a montessori indergarden and is quite happy there. DS best friend is back to his class  - i am so glad he is back  - the parents send that boy to a boarding school for sports and he couldn't cope.

    better get going - who would like to start a new thread?

    Hi All!

     

    I might have mentioned this before, but a number of years ago I went to Germany for 3 weeks with my German friend.  She had relatives that we went to visit.  I wanted to learn some German so I could get by especially since her oma and opa did not speak any English.

     One of the tools we used was board games.  My friend had some German games and we would play them.  I was great with numbers and words like "Doubles". lol!  It came in very handy because we would play Yahtzee with her family in the evening and I had no problem!

     

    I am afraid I have forgotten most of what I had learned now because I just have no occassion to practice.  What I need to learn is Arabic.  We have a large Arabic population here and many of the patients I work with speak little or no English.  It would be helpful if I learned at least some words.

     

    If you are interested - the town we visited is called Petershagen.  That is where most of my friend's relatives lived.  We also went to Berlin to see her brother's family.  He was stationed there at the time.  This was a few years before the wall came down.  He took us camping and sightseeing.a little bit.  He had an emergency and had to leave us to get back on our own so we wound up spending a day in Cologne (I can't remember the German spelling or how to make an umlaut).  We had a wonderful time.  I love unexpected stops.

    Yatzee is calles Kniffel in Germany - we love this game very much

    Hello ladies! I am very busy today and I will be back later. Kathleen,I forgot all my Russian,since I did not use it,but now I have some Russian friends and a month ago a large Russian delegation came and I wished I still cold speak it.I have a German botanist friend and she still speaks it perfect.She helped with the meeting and was a translater.Great,said you could visit Germany. I have a cousin in Köln and I lived most of my life in Berlin.=======================================================================Twinkle,where is our friend Shannon ?     Twinkle and Renate - thanks for the correct spelling.  I thought that was it, but I wasn't sure.  It did not look right to me when I typed it.

    Also thanks for Kniffel - I did remember it had a different name, but did not remember it.  Does Kniffel mean something?

     

    I am beginning to worry about Shannon.  It is not like her to be gone so long.  Did she mention anything about being gone?

    i wonder too - i do not recall Shannon to be gone someplace and since she started the challange i am a bit surprise to see her not comming back and yes that is not typical fo rher.. so maybe she is under the weather...
