    7-up lemon Jello with sliced banana recipe?

    I was at a funeral luncheon where I chose an odd-looking, yellowish banana-Jello dessert.  It seemed to have mini marshmallows in it.  It had some sort of yummy, creamy topping.  My brother-in-law told me "Mom used to make something like this years ago.  It has 7-Up in it."

    Other people told me it is "standard funeral-luncheon fare."  For 45+ years, I've been missing this delicacy!

    Do you have a recipe to share for this incredibly yummy creation?

    I love this salad!  It's in our church cookbook.  My mom used to make it at Christmas time.  Hmmm, might have to suggest it for this year.

     

    7-UP SALAD

     

    2 boxes lime Jell-O

    2 c. boiling water

    2 c. 7-Up

    2 c. crushed pineapple (drained)

    1 c. small marshmallows packed

    2 large bananas, sliced

     

    Mix.

     

    TOPPING

    ½ c. sugar

    1 egg, beaten

    2 tbsp. flour

    2 tbsp. butter

    1 c. pineapple juice

    2 c. whipped cream

     

    Cook first five ingredients carefully and cool.  Add 2 cups whipped cream and spread evenly over salad.

    7-UP Salad

    2 regular of 1 large lemon Jell-O
    2 cups hot water
    2 cups cold 7-UP
    1 (20-oz) can crushed pineapple, drain and reserve juice
    2 or 3 bananas, sliced
    1 cup mini marshmallows
    Topping:
    1 cup reserved pineapple juice
    1/2 cup sugar
    2 tablespoons flour
    1 egg, slightly beaten
    1 tablespoon butter
    1 package Dream Whip, prepared as directed

    Put lemon flavored Jell-O into a bowl. Add hot water, then cold 7-UP.  Mix well.

    Pour Jell-O into a 9X13 inch glass baking dish.

    Drain pineapple and reserve juice for topping. You will need to get one cup of juice. Add the pineapple, bananas and marshmallows to Jell-O.  Let completely set until firm.

    Topping:

    In a saucepan combine 1 cup of the reserved juice, sugar, flour and egg. Cook until thick. Add butter, then cool.

     

    Prepare Dream Whip as directed on the package. Add cooled, cooked mixture to Dream Whip. Stir well. Spread on top of set Jell-O.

    Wonder if she got this?  I typed this out for her from my own cookbook.  Sure hope I didn't waste my time.
