    good job on the casserole, Natasha, I'm from Minnesota where every girl has learned to make casseroles by the age of 7 ... no kidding, I can make a casserole out of just about anything! HAHAHAHA  Yours sounded lovely! 

     

    I found out at 1 this afternoon that I was going to get 2 new foster girls (sisters) at 2:30, so I quick did a run thru of the house, threw pork chops, potatos and carrots in the crock pot and was ready!  They are such sweet girls, 1/2 sisters, 13 and 9.  The 9 year old has some autistic disorder, but she's very sweet and fit right in around here!  The 13 yr old is very protective, sweet, helpful.  It's a nice change of pace!

     

    Talked to one of my previous foster girls today, she lives in CA now and got married right around the time I was sick, so I didn't know til today!  She's doing pretty well.  I wish her mother would pay her some attention!  Frustrating!  I'm glad she keeps in touch!

     

    Okay, I'm feeling a tad scattered, so I will come back later!

     

    Natasha, make me a plate, would you, some casserole and some cookies ... (I used to eat dough, but haven't in years cuz I don't wanna get salmonella or whatever you get from raw eggs).

    Rebecca, so sweet about the girls you took in. How many can you have at once? Still gonna get the 2 yr old? Thats so great about staying in touch with your old foster children. Imagine how many lives you have changed! I think you are such an inspiration.

    Of course Ill make you up a plate of casserole and some cookies. I dont worry too much about salmonella...Ive eaten a lot of dough in my years and never gotten sick yet *shrugs*. When you think about it... home made mayos, dressings, lotsa stuff has raw eggs. I dunno. Maybe I just have a good immune system... however the other day I was watching Diners Drive Ins and Dives... and a restaurant was talking about their salad dressing recipe, and itmade a big batch, but hadat least 2 dozen eggs in it. I watched them make it all, mix it together... they didnt cook it! I was like OMG I cant imagine how sick people could get if they ate too much of that!

    I'm a wuss, I don't eat anything with raw eggs in it ... if it's something I MUST have, I use egg beaters.  I think it's because I had to be so careful with Ross when he was little, he was so medically fragile that getting salmonella or anything like that could have killed him.  So, I'm all over the raw food thing.  Also, I'm incredibly lazy and have never made my own mayo, salad dressing, etc.  HAHAHA  That's why there is Miracle Whip!

     

    My husband thinks I'm inspired to go live in the nut shack!  He just laughs at me and lets me "collect" more children!  The 2 year old will only be for the weekend if you have her at all, I can't seem to get my hands on a long term baby! DARN IT  I need someone who will sit on my lap and let me smush them!  We can have 4 foster kids at one time, but could have more if they are related.  Like right now I have 1 open spot, but if, say, sisters came up, I could take them together.  It's a complicated system they have, it makes you slightly nuts to try and figure it out!

     

    Okay, really gotta get some stuff done!  bye!!!

    Good morning.

    Rebecca you are an angel. When you get new children, I know your children are use to having others come and go, but do any of the foster children that have been with you get jealous?

     

    Going to WW and may stop by WM, never did make it over there, get some yogurt and a frozen pizza for lunch. I like that one on frech bread, after I bake it cut it in chunky strips and bake it some more to get it crispy.

     

    There is a large area around here that is in danger of flooding, not this part, becasue of all the rain last Thursday. They have a lot of lake, low spots levees (sp) that are in danger of going over. A lot of houses have water and people are having to leave their homes, but some are staying as long as they can then they have to get them in boats.

    Hi Pammie!!!   Sorry the knee is bothering you :-(  I"m with you - no way could I sit & do nothing for the next 30 years. Crazy doctor ideas LOL!!!

     

    Natasha - glad the casserole turned out. I may try something similar - like Rebecca said, in the midwest we know casseroles LOL!!!! I'll probably do everything except change shredded cheese for the condensed cheese soup ( I try to stay away from condensed soups) and I"ll use sliced/diced sweet onion instead of the french fried onions. I don't care for those at all. You've got me hungry for comfort food :-)

     

    Rebecca -that's great about getting the sisters. Is it normal to have that short of notice? 

     

    Dusta - glad Mel isn't getting worse ((((hugs))))  mmmmm I love Copelands. We have one here in charlotte and it's always packed.  Ours has live music on saturday nights - anything from dixieland jazz to zydeco to blues. It's so cool!!!!  hope it goes well at WW today :-)

     

    Hi muril~!  we had mayoral voting yesterday. Polls were packed! Lots of stuff our incumbent did that displeased a LOT of the public.

    I'm not a fan of raw cookie dough, I much prefer the finished product Big Smile Dh loves it though so I have to be careful if I'm baking & he's home. Usually I pull some out into a dish & let him have that so he's not dipping a spoon into my bowl constantly.

     

     I have a question for those who had a big wedding - I'm wondering if this is normal costs for dinner & reception location.  As most of you know dh & I eloped then held a huge party so I'm clueless on what things cost for a "real" wedding Stick out tongue.  My BF is getting married in february and we're both from middle class, blue collar families. We are regulars at target, kohls & walmart. Well the guy she's marrying is from an upper class family. Nice guy, nice parents and all that, he's perfect for my BF. But the wedding is quickly becoming an upper class affair, and my BF called me last night crying. She doesn't want debt at the end of this - she was raised that you don't buy it unless you can pay for it. And she doesn't want 1000's of $$ in debt to pay off - she's of the mind that the marriage is more important than the actual wedding event/day (it's important but you know what I mean, right?).

     

    so the issue?  The reception is at a ballroom and the cost is becoming enormous because everything has a per item fee. I mean everything! has a fee.  Is this normal or am I seriously this clueless?

     Minus the fee for the ballroom - 

    dinner - per person is $175 (yes, one hundred seventy-five dollars). It is a 5-course dinner so maybe that's correct.

    tables - a fee per table

    chairs - a fee per chair

    chair covers - fee per cover

    plates - cause that 5-course meal has to be served on something right? - a fee for each actual plate

    silverware - fee per serving/plate.

    water glass - fee

    wine glass - fee

    coffee cup/saucer - fee

    cake plates - fee

    table cloth - fee

    napkins - fee

     

    we both thought the $175/plate plus the ballroom fee (which is ginormous) was including all of this. But it's not! She's gone from $175/plate to basically $285/plate when all the fees are included. And that doesn't count the bar and drinks yet.  Are she & I so out of it that we think this is outrageous? Or is this really how things are for the rich? I"m not being petty or judgmental - I have no clue what it's like to have this kind of money to spend so I"m honestly curious.

    Good Morning All!  I am on my second cup of coffee and need to get a plan on what needs to get done today- since I have two days with Miss Nancy starting tomorrow. It should be easier to get up at 5 now and it will actually be daylight when I get there at 7 (usually is still dark) so that is good. :)

     

    Natasha, that tatertot casserole sounds great. I make a simple one sometimes with tatertots - haven't made it in a while so may have to do that soon. I think we should start a casserole thread. Why don't you start it? :)

     

    Rebecca, glad the new girls are sweetie pies! I was wondering the same thing Dusta is- do the others get jealous? Just wondering- seems like it would be hard for them to share you and all you special touches with another child. Some children have a problem realizing we have a lot of love to go around.  Make sure you share you chili tot casserole on the new thread when Natasha starts it! It sounded yummy.

     

    Edit*  Morning Dawn! I am like you, I usually saute some real onions instead of the french fried. I made a simple soup last night and DH loved it. I sauteed a diced sweet onion in evoo, then added a can of diced tomatoes, 3 cans of chicken broth, some basil and oregano, sea salt(brought all this to a boil), the added a  little over two cups of rotisserie chicken peices. I put it on the lowest simmer for 30 minutes(don't want your chicken to get stringy) and then added 1/2 cup of whole wheat rotini and let it simmer(really wasn't simmering at times though on the real low), for 30 minutes more- it was really tasty.

    Dawn, since I live in pricy New England, it's not unusual to spend around 30-40K on a wedding for about 200 people.  Would I do it (or do it for my daughter)?  no way.  Wouldn't that money be better spend on a down payment for a house?  Maybe I'm old fashioned, but the wedding is the easy part.  It's the next 30 years that shows everyone what you're made of !  LOL!  My friend's daughter paid $100 each for wrought iron table centerpieces.  WTH?  It's all a show, IMHO.

    Our wedding (we're hippies, ok) cost about 100 bucks.  We got married at our home, we made sandwiches and got a keg of beer.  My aunt made my cake.  I made my dress, it cost 8 bucks. My sister (matron of honor) wore something from her closet.  I picked wildflowers for a bouquet and for the picnic tables.   And we had a honeymoon at our family's waterfront cottage.  (free).  My boys have been told that if they get married, we would happly host a pleasant and adequate rehearsal dinner...but the wedding is the responsibility of either the couple or the bride's family, and although we hope they have a nice wedding, we're not going to get sucked into shelling out thousands for a big show.  That's the reward for having boys! LOL!

     I have to share a casserole story about my mom, who hated to cook.  One week, when I was a kid, on Monday we had a casserole.  Tuesday, another kind of casserole.  Ditto Wednesday.  On Thursday, she combined the three casserole leftovers into a fourth casserole.  That's when Dad put his foot down.  We ordered out that night!  LOL. I'm not a big casserole fan, but I do like Lasagna. 

    Work is busy.  Knee is pain free (hail Kenalog!!).  Sun is shining.  Snow tomorrow!  (my week in four sentences).

    EZ Stuffed Crust Chunky Chicken Pizza  

    Ingredients

    • 2- cans refrigerated pizza dough
    • 1 10-piece package mozzarella cheese sticks
    • 1 cup prepared pizza sauce
    • 2 large boneless chicken breast halves chopped into 1” chunks.
    • 2 t. rosemary
    • 2 T olive oil
    • 3 cloves garlic mince
    • ½ cup chopped yellow onion
    • ½ cup sun dried tomatoes in oil drained
    • ½ t. salt
    • ½ t. pepper
    • 4 cups shredded mozzarella cheese
    • ½ cup chopped black olives

    Directions

    • Preheat oven to 450 degrees. Unroll both cans of pizza dough onto a 9x15” jelly roll pan, long sides in the center. Press center crease together, and distribute dough evenly over the edges of the pan. Remove mozzarella sticks from individual wrappers, placing two on each short end of the jelly roll pan and three along the long edges. Press edges of pizza dough tightly and neatly over cheese sticks, making a nice, smooth edge.
    • Meanwhile, in a medium skillet over medium heat, sauté the garlic, onions and rosemary in the olive oil. Add the chicken, sundried tomatoes, season with salt and pepper, and sauté until chicken is no longer pink. Set aside.
    • Spoon the pizza sauce over the center of the dough, spreading to meet the cheese-filled edges. Top with cooked chicken breast mixture. Spread the shredded mozzarella cheese over the chicken, covering evenly. Top with olives.
    • Bake 25 minutes, or until the edges are browned and the cheese is bubbly. Yield: serves 8

     OMG Pammie - that looks fabulous!!!!!!!!!!!!!  thank you so much for posting, I'm definitely putting this on my menu next week :-)

     

    your wedding isn't too far off our party. We eloped, then had a huge picnic. I wore a sun dress from Kohl's, dh wore khaki's and a short sleeve golf shirt. We had all the summer picnic food along with lasagna, ravioli & a few "nice" dishes. Went through 3 kegs of beer, lots of soda and just had a great time. Everyone came in casual summer clothes and had a blast. It felt more like a block party than a wedding party. But that was totally dh & I - still is. We aren't very traditional people LOL!!!!  We think about it now, wonder if we should have had a real wedding and it always comes back to just he & I going off somewhere.  My mom is still upset. I didn't mean to upset her, I really didn't. But the wedding that was being planned wasn't "us" and no one was listening to dh & I.  Anyway - my mom asked me a few weeks ago what I would do if samantha "did that to me".  I don't know - I just want my baby to be happy. I can't see getting upset with her over something I did myself. 

     

    Hi Muril - I hope you have a good day with Miss Nancy tomorrow :-)  I like that it's light out now too!  One day last week it was so dark when I left at 6:30am that the bats were still out. I didn't like that surprise flying past my head LOL!!!

     Wedding talk... when Sean and I got married we looked at a lot of different options.

    Dawn, with your friend... usually CHINA would be one fee total, and sometimes the caterers even include a very base china... and if you wanted something different you would have to pay for it. with renting the ballroom... USUALLY some amount of tables and chairs are provided (but they would most likely be unmatched tables, and ugly chairs) so if shes wanting same size perfect tables with fancier chairs, it would definitely cost. Also with the chair covers, thats normal to pay per each as its not something that is necessary. any *extras* always cost. Also with linens, you must pay.

    Sean and I looked at so many options. We didnt want to ask our parents to contribute because we knew they could not afford it. We finally decided, doing it all on our own, we would go small.... but still didnt have ideas nailed down. I had a thought in the back of my head from years before that I would like to get married at my moms, boyfriends mom and step dads house. I know. I just call them Grandma Judy and Grandpa Steve. Steve usta officiate a long while back and is a very sweet, religious man. Their home is a beautiful victorian home, already always decorated, though maybe not in a wedding way.

    I kept falling back on this and finally just asked. My grandma Judy was thrilled with the idea. But it is a very small home and yard. Im talking small. We wanted Steve to officiate but he works for the Bremerton Navy as a supervisor for underwater welding and he is often away for 6 months at a time, with little notice. we stressed. We went ahead with planning the wedding there, and Judy wanted to do everything. Also, the back yard wasnt finished. It had been dug up and layed with old brick completely, the awning was only half built, and the whole for the huge fountain wasnt finished being dug yet... and it was 6 months away. We had set the date before figuring out location. Hahaha

    So, Steve got to working non stop on that back yard. I absolutely love him. When we last went and saw the yard and Judys home about 3 months before the wedding, things still werent done out back. But Judy assured us it would be fine. Only thing we werent sure of was if steve would be there or not (possibility they would be sending him to CA). I was frantic. Judy made sure we had an officiant from their wedding squared away for just in case. A WEEK before the wedding we got work that steves work granted him vacation for that weekend so that he surely wouldnt be away. Thank God!

    We didnt really have to do anything for the wedding. It was very small. Im talking smaller than a family BBQ small. Seans father and step mom surprised us by paying for the food we ordered, from a local BBQ place (only came to 300). It was brisket, smoked chicken, hot links, beans, potato and mac salad...  yummy! We picked that up the day before the wedding and drove it over to Grandparents home to be reheated the next day. When we got there, no one was home yet and mom and Judy called and forbid me to go into the back yard. They had decorated (I didnt know anyone was decorating, the fountain was supposed to be the decor).... Anyway, they wanted to be there when I saw teh yard for the first time. So we waited. And Oh my gosh my family really pulled together. It was used stuff, tulle and bows, etc. But it was beautiful. I couldnt believe it. It felt like it was gonna then be a "real" wedding. While planning my fear was this wouldnt be like a real wedding and I was some what upset.

    So the day before, we dropped off food, saw the yard and house, and then made the bouteneirs for Sean, and for fathers and grandpa steve... and the corsages for the mothers and grandmas... and then we made my boquet by hand with flowers I had let her know I like. We did all that by hand that day. We used decorative tables she had set up (lil garden iron things) and thats the only tables we had (maybe 3 of those)... and we just used the iron chairs and decor benches she already had. We only invited 16 people INCLUDING SEAN AND I. Next day, only 14 showed.

    It was a beautiful wedding. Better than I could have imagined. I dont remember most of it. The single most expensive thing I bought was my dress. I was afraid of finding something pretty in my size. I was frantic with it, so about 3 months before the wedding I went to davids Bridal, alone, and tried on a dress. It was the first one I saw, and it fit. And it was beautiful, and thats what I got. It was over my budget (I wanted to spend about 300) but it came to 600 all said and done. I dont have a single regret though. I felt like a princess. I will never forget... standing on the porch of the home having my photo taken of the BACK of the dress, and I couldnt see what was going on... two teenage girls had walked by and I heard "Oh my gosh she looks soooooooo beautiful". It was the first time, aside from my family and Sean, that I had ever been called beautiful, pretty, whatever. I just about cried (if it wouldnt have made my eyes red). I cry thinking about it now *sniff*

    Anyway, wedding went beautifully, someone else heated up the food even though I thought I would be able to do it. I was too busy. It was a whirlwind. We didnt have a professional photographer. Every member of my family had cameras as we just compiled those pics. They turned out okay. If I changed anything, it might be to get a real photographer, but oh well. Food was great (though I barely are any...) and Judy bought our cake from Costco. Simple, beautifu,, elegant. We still had a cake topper though. It was as elegant as it could have been for us, and perfect for who we were. Just our closest of family was there, no outside friends... as really, our family is whats important to us. Thats it.

    Oh, and there was absolutely no alcohol. First, my dads an alcoholic and I didnt wanna deal with him drinking there. My split family already doesnt get along. And steve being very religious, doesnt keep alcohol in his house. So it was also out of respect for them.

    The room I got ready in was my grandmas bathroom, and it was just as luxurious as any  star hotel bathroom. Its the size of my bedroom. A sunken tub that is jetted, huge mirrors and sinks with Swans the water comes out of... plush carpets, etc. Great lighting. It was wonderful.

    Sorry for rambling. Its nice to rethink of that day :) I still havent seen the video from it and its been a year and a half..... No regrets with what we chose to do. all it costed us was the dress, and Seans clothes. Simple. Most other stuff was borrowed or already had there. Perfect.

     Sure is quiet here today...

    Im having some frozen french onion soup for lunch. You get it at costco, it comes frozen in a cup size, with the bread and cheese already on it. You put it in an oven safe bowl and bake for 40 min. I baked mine too long because I lost track of time (an hour).... so hope it turns out okay. Now Im waiting for it to cool....

    It was late start day today, have I told you all how much I hate late start day??????  Probably complain about it on the first Wednesday of every month!!!!!!!!!  The kids go to school 2.5 hours later than normal ... ARGHHHHHHHHHHHHHHHHHHHHHHH

     

    Anyway, thanks for the casserole receipe Natasha, looks yummy!  I would probably add rice to stretch it!  HAHAHA  I'm always stretching the dinners!

    Yes, to answer your questions, sometimes the current foster kids act out when we get new ones, especially if they have been here for awhile and have been the only one for awhile.  Bella was insane last night and this morning, WOW she was wound up.  I told her that she really needs to take a step back and calm down, but I am not sure she could even hear me.  We will keep working on it.  The other thing is that you never know how long kids will be here, so it could be quick, or could be long, I usually try and just coast for a few days until we have some idea.  My kids think it's cool to get new kids, but that only lasts for a couple of days,then they are like, oh yeah, whatever.  It's always fun to have more kids to play with.  Last night the girls played UNO and since the oldest (13) was playing with them I could go in the kitchen (they were at the dining room table and I could see and hear them :)) and do the dishes without having to worry that someone was going to cheat or throw a fit or whatever.  It was nice!  Then they did homework and went to bed by 8:30, that was a treat.

     

    okay, nap time, then I have to pick up at school!  BLECH  that's the worst part!

    Rebecca, I have *never* heard of a late start day. Why in the world would they start late? We had early release once a month but... starting late? That would throw off every parents schedule of work, etc. How does that even work?
