    Homemade popsicle recipes

    With the kids out of school and the hot weather coming I am on the lookout for popsicle recipes. I have a couple to share but would love to get some more.

    Popsicles
    1 pkg. kool-aid unsweetened drink mix (any flavor)
    1 pkg. jello-small size (any flavor)
    1 C. sugar (cut back to 3/4 C if you like them a bit tart)
    2 C. boiling water
    2. C. cold water

    Mix together kool-aid, jello and sugar. Add boiling water. Stir to dissolve. Add cold water. Mix well. Pour into popsicle molds and freeze.

    Here is another more healthy one. This was posted by laston as a smoothie recipe. We had leftovers and they made great popsicles.

    Strawberry Pops
    2 C. pineapple juice
    1 sqauare can frozen strawberries in syrup
    1 individual strawberry yogurt (approx. 1/2-3/4C. size)

    Mix all ingredients in blender. Pour into molds and freeze.

    Are you using the jello for texture in the popsicle. I know the "just"
    kool-ade ones freeze to hard

    Hi Cathylew, Yes the Jello does give the popsicles a nice texture. They are not hard like the ones made with just juice. The jello also keeps the popsicles from dripping too much so they are not as messy.

    I like the popsicles that have fruit and juice in them. They are so expensive. 6 in a box are 3.29. They taste like they have pureed strawberries and juice together. They are good but not worth the money. I wish I could find some sturdy, easy to use molds that don't make such a mess when you are trying to make the popsicles. Any good tips and ideas?

    I noticed that the supermarket in our area has a whole bunch of popsicle molds out this year(but that's in Canada!) I use the ones that hold about 1/4 C. and are round. You just pour the mixture in the top and put the sticks in place. Each holder holds 8 popsicles. I use a juice jug with a spout to mix and pour the mixture so I have very little mess. I don't like making the bigger ones because they melt before the kids can eat them!

    I know what you mean about the popsicles being expensive! I have four kids so a package doesn't go very far for us. I have mixed pureed fruit in with the kool-aid popsicles but I find that the fruit all goes to the top. I think they are better plain. (IMHO)The second recipe for the strawberry popsicles didn't separate. They were really good and not too sweet. They were a bit on the expensive side to make but they made a lot! Considering how much you pay for six popsicles that really don't have much fruit in them I would say that they were a good deal-plus you know what is in them!

    Maraschino-Lemonade Pops

    1 jar (10 oz.) maraschino cherries, drained, juice reserved
    1 can (12 oz.) Frozen pink lemonade concentrate, partly thawed
    1/4 c. water
    8 (3 oz.) paper cups
    8 popsicle sticks

    Place one whole cherry in each paper cup. Coarsely chop remaining cherries. Put chopped cherries, lemonade concentrate, water and reserved cherry juice in the container of an electric blender or food processor. Puree or blend until smooth. Divide cherry mixture among paper cups. Freeze 30 to 40 minutes, or until very slushy. Place popsicle sticks in the center of each cup. Freeze 1 hour longer, or until firm. To serve, peel off paper cups.

    Hope you like this one, I haven't made them yet but, they sound really good.

    I like to make a batch of instant pudding and put them in the popsicle holders. Instant pudding pop. All flavors are great to use.

    carolene e, I have the same popsicle molds. I tried pouring instant pudding into them and when I went to get one out, none would come out, and a few the handles came out and the popsicle stayed in! I had to thaw them all and dump them in a bowl, and DD and I ate it all with a spoon. What do you do to get your popsicles out, when you only want one or two? Would PAM work?

    Not sure if it was here, or in one of the Reiman magazines - A bright little child suggested to his mom to put a popsickle stick in the ready to eat jello pudding cups and freeze!

    I am going to have to try making fudgsicles using the pudding. My mom used to make them with a recipe but it was lost and I wish I could find it again! They were my favorite.

    As for pulling the pops out of the molds. First of all you have to make sure that they popsicles are frozen solid. I usually leave them overnight just to make sure. I run the popsicles that I need under warm water and twist the stick very gently until they loosen and you can just pull them out. If you are making something that has a lot of milk (ie frozen leftover milkshakes or maybe even frozen pudding) you will notice that they are much harder to remove from the molds because they don't freeze as solid as something with a lot of water. I am not sure if Pam would work but it certianly would be worth a try. Sometimes when a stick pulls out I just fill the hole with water and put it back into the freezer and try again. The strawberry pops had yogurt in them but they were very easy to remove from the molds. The kids loved them and I liked the fact that they didn't have a lot of sugar. They are going to be a definate make again. It will be fun to try some of these other ideas as well because variety is the spice of life!

    Here's a good one made with Orange Juice:

    DOUBLE ORANGE POPS

    1 small package orange Jell-O
    1/2 cup sugar
    2 cups boiling water
    2 cups orange juice

    Dissolve Jell-O and sugar in boiling water. Add orange juice. Pour into molds and freeze. I use Tupperware molds, but you can use small paper cups and insert a wooden stick when partially frozen.

    1 box instant chocolate pudding
    1/2 cup white sugar
    3 eggs
    4 cups milk
    beat together and freeze
