I always make popsicles using a package of koolaid and but only 1/2 of the water called for on the back (all the sugar). These are not as hard ... easier to bite into.

I know lots of people are down on Martha lately, but I've never gone wrong with one of her recipes. I made this week because I was eating WAY too much ice cream trying to keep cool. I'm going to try it with strawberries too as soon as we get some decent ones in our area.

    Blackberry Tie Dye Pops
    www.marthastewart.com

    9 ounces blackberries -- (1 1/2 pints)
3 tablespoons freshly squeezed lemon juice
32 ounces low-fat or nonfat vanilla yogurt

    1. Place 7 1/2 ounces blackberries in the bowl of a food processor. Process until smooth, then pass through a fine sieve into a glass measuring cup. (You should have 1/2 cup purée.) Stir in 2 tablespoons lemon juice; set aside.

    2. In the jar of a blender, blend yogurt with remaining tablespoon lemon juice until smooth.

    3. Layer each 1/3-cup pop mold with yogurt and purée, adding the rest of the berries along the way. Swirl mixtures together with a knife.

    4. Let freeze 25 minutes. Insert wooden pop sticks halfway, and freeze overnight. Pops will keep, frozen, for at least 3 weeks.

*For blueberry pops: Use 5 ounces fresh or frozen blueberries.
*For raspberry pops: Use 3 pints raspberries.

    1 pkg. JELL-O Brand Gelatin -- (4-serving size)
    1/2 cup sugar
    2 cups cold water

These would be fun for the 4th, just like the Bomb pops I used to get when I was a kid. Again, very sweet, kids will love them!

    Rocket Pops

2 cups boiling water -- divided
    1 pkg. red jello -- (4-serving size)
    1 cup sugar -- divided
2 cups cold water -- divided
    Ice cubes
    1 pkg. blue jello -- (4-serving size)
8 oz COOL WHIP Whipped Topping -- thawed

STIR 1 cup of the boiling water into red gelatin and 1/2 cup of the sugar in medium bowl at least 2 minutes until completely dissolved. Mix 1 cup of the cold water and ice to make 2 cups. Add to gelatin, stirring until ice is melted.

POUR about 1/4 cup gelatin into each paper cup. Freeze 1 hour.

MEANWHILE, stir remaining 1 cup boiling water into blue gelatin and remaining 1/2 cup sugar in medium bowl at least 2 minutes until completely dissolved. Mix remaining 1 cup cold water and ice to make 2 cups. Add to gelatin, stirring until ice is melted. Refrigerate 1 hour.

PLACE about 3 Tbsp. whipped topping over red gelatin in each cup. Carefully pour about 1/4 cup blue gelatin over whipped topping. Freeze about 1 hour or until almost firm. Insert pop stick into each cup for handle.

FREEZE 4 hours or overnight until firm. Place bottom of cup under warm running water for 15 seconds. Press firmly on bottom of cup to release pop. Store leftover pops in freezer. Makes 16 pops.
