    Here's another fudgesicle recipe - a bit more work to make. Haven't made these since my kids were little!

    Combine contents of the cook-type chocolate pudding package (small) and 3/4 cup sugar in a large saucepan. Slowly add 3 1/2 cups water, stirring to keep mixture smooth. Cook over medium-high heat, stirring steadily until mixture just starts to boil. Remove from heat. Cool to room temperature, stirring occasionally.

    Pour cooled mixture into square baking pan. Freeze until ice crystals form around edges, about 45 min. Turn into larger mixer bowl; beat until smooth. Fold in 1 cup heavy whipping cream, whipped. Spoon into 12 paper cups. Insert a wooden stick or spoon into each cup. Freeze until firm. Peel off paper to serve. (12 servings)

    ROCKY ROAD POPS
    1 package of chocolate pudding
    1/2 cup miniature marshmallows
    1/4 cup chopped peanuts (optional)

    Make pudding according to directions on package. Add marshmallows and nuts. Mix well, pour into molds and freeze.

    RC Note: In our test kitchen, we doubled the recipe by used a large package of instant chocolate pudding made with skim milk. The result - eight large (2.5 oz.) yummy popsicles.

    For a creamier consistency consider using milk with more fat (like 2%), or try using cook-n-serve pudding.

    FIZZY FRUIT POPS
    1-12 oz. can fruit nectar (strawberry and peach work great!)
    1-12 oz. can tropical Sprite
    1 cup crushed or shaved ice

    Mix well, pour into molds and freeze. The crushed ice seems to help the pop retain its' “sparkle.”

    FRUITY POPS
    1 cup pineapple tidbits
    1 small can mandarin oranges
    2 cups white grape juice

    Combine all ingredients (can blend smooth if preferred). Pour into molds, making sure the fruit is evenly distributed. Freeze.

    CHOCOLATE POPS

    8 oz container plain yogurt
    2 tbsp cocoa powder
    2 tbsp honey
    popsicle sticks and dixie cups

    Liquify in a blender, pour into molds, insert popsicle sticks, and freeze.

    Pineapple Pops

    2 c. plain yogurt
    1/2 c. canned crushed pineapple (packed in own juice instead of packed in syrup)
    1 can frozen pineapple or orange-pineapple juice concentrate, thawed

    Drain the can of crushed pineapple.
    Put all the ingredients in a medium-size bowl and mix.
    Fill molds and freeze.

    Serves: 6

    FROZEN FRUIT POPS
    A healthful, affordable recipe.
    It is a tasty, healthful and inexpensive way to take advantage of whatever fruit is seasonally available. Use single fruits or combine several for special "house blends."

    Serves: 12

    Blender or Food Processor:
    1 ripe honeydew melon
    2 ripe bananas
    2 pints ripe strawberries
    1/4 cup honey or sugar

    1. Help children peel, seed, and cut fruit into chunks. Put fruit and honey or sugar in blender in small batches and puree. (Pops will taste less sweet when they are frozen.)

    2. Ladle the puree into Popsicle molds and freeze for at least 4 hours or until frozen.
    Puree can be frozen in plastic ice cube trays. Poke Popsicle sticks into place when the pops are almost frozen so that the sticks will stay upright.

    Root Beer Ice Pops

    The flavor of an old-fashioned root beer ice pop without having to chase after the ice cream truck! Even the figure-conscious can indulge in these pops, which are fat-free and have just 132 calories.

    Makes 6 (1/2 cup) servings

    3 cups hot water
    1 cup sugar
    1 tablespoon McCormick® Root Beer Concentrate
    1 teaspoon McCormick® Pure Vanilla Extract
    1 teaspoon lemon juice


    Directions:
    1. Stir together sugar and hot water in a medium bowl until sugar is thoroughly dissolved. Stir in root beer concentrate, vanilla, and lemon juice.
    2. Pour 1/2 cup of mixture into each popsicle mold** and place in freezer for about 2 hours, or until mixture is firm enough to support popsicle sticks. Insert popsicle sticks into each mold and freeze until thoroughly set.

    **Or use small disposable plastic cups and plastic spoons in place of popsicle molds and popsicle sticks.

    Note: Freezing time may vary according to the size of popsicle mold.
