    Looking for your FAVORITE BANANA Recipes...

    Would you share with me your favorite banana recipes?

    Have quite a few bananas that need to be used up was leaning towards a banana cake of some type, but it really doesn't matter.

    So what is your ABSOLUTE FAVORITE banana recipe?

    This is such a good recipe. Put a cream cheese icing on it and I guarantee it won't last long.

    BOUNTIFUL BANANA CAKE
    2c. flour
    1 tsp. baking soda
    2 eggs
    1 1/4c. sugar
    1 1/4c. mashed bananas
    2 tsp. baking powder
    1/2 tsp. salt
    1/2c. oil
    1 tsp. vanilla
    3/4c. sour milk or buttermilk
    Beat eggs, oil, sugar, vanilla and banana. Mix well then add milk and dry ingredients. Mix then pour into a greased 9x13 pan. Bake at 350 til toothpick comes out clean.

    Banana Chocolate Chip Bread

    1/2 cup margarine
    1 cup sugar
    3 ripe bananas, mashed
    1/4 cup chocolate chips
    1 tsp. baking soda
    1/2 tsp. salt
    2 eggs
    1/4 cup nuts, optional
    2 cups flour

    Cream together margarine, eggs and sugar. Stir in mashed bananas. Mix together flour, salt and baking soda. Stir into creamed mixture. Add nuts and chocolate chips. Grease bread pan on bottom only. Bake at 350 degrees for 50-60 minutes. Check doneness by inserting a toothpick into center of bread. If toothpick comes out clean, remove from oven. Cool 10 minutes, then remove from pan and finish cooling on a wire rack.

    Comments: This is absolute the most moist banana nut bread I have ever made. I used a 9x5 loaf pan for this recipe. I used English walnuts. I have also used Butterscotch chips in place of the chocolate ones. I haven't used Peanut Butter chips, but I am thinking it might be pretty good too.

    These have been around awhile and many can testify how great these are!

    BLACK-BOTTOM BANANA BARS

    TASTE OF HOME 4/5/94

    1/2 cup Butter or margarine -- soften
    1 cup Sugar
    1 Egg
    1 teaspoon Vanilla extract
    1 1/2 cups Mashed ripe bananas (about
    3 medium)
    1 1/2 cups all purpose flour
    1 teaspoon Baking powder
    1 teaspoon Baking soda
    1/2 teaspoon Salt
    1/4 cup Baking cocoa (I used Hershey's Cocoa)

    In a mixing bowl, cream butter and sugar. Add egg and vanilla; beat until thoroughly combined. Blend in the bananas. Combine the flour, baking powder, baking soda, and salt; add to creamed mixture and mix well.
    Divide batter in half. Add cocoa to half; spread in a greased 13x9x2"
    baking pan. Spoon remaining batter on top and swirl with a knife. Bake at 350 degrees for 25 minutes or until the bars test done. Cool.

    Coconut Cream Pudding Mix Banana Bread

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 cups sugar
    1 cup oil
    5 lg eggs
    2 cups mashed bananas
    1 tsp salt
    1 tsp soda
    1 tsp cinnamon
    2 cups flour
    1 1/2 cups walnuts -- chopped
    2 pkgs instant coconut cream pudding mix
    1 tsp vanilla

    Mix all ingredients together.Pour into 3, lightly sprayed, loaf pans.Bake for 1 hour @ 350F.
    I mix all the wet ingredients together, then mix the dry together, then combine them.

    I`m telling you Cittie you need to make this one....I have made this over and over again and it always gets wonderful raves from my friends and coworkers.....


    Banana Bars & Cream Cheese Frosting

    1/2 cup butter and or margarine
    1 1/2 cups sugar (white)
    2 eggs (large)
    2/3 cup milk with 1 Tbls.white vinegar
    3 mashed bananas (large)
    1 tsp. vanilla
    2 cups flour
    3/4 tsp.salt
    1 tsp. baking soda
    Cream butter and sugar, then add eggs, milk with vinegar,bananas,vanilla,flour,salt and soda. Pour on greased jelly roll size pan(11x17). Bake at 350* for 30 minutes(might have to bake longer) and or until tooth pick inserted in center comes out clean.

    Cream Cheese Frosting
    1-8oz. cream cheese(softened)
    1/2 cup butter(softened)
    2 teas.vanilla
    4 cups powdered sugar
    In a mixing bowl beat together the cream cheese,butter and vanilla until light and fluffy.
    Gradually add the powdered sugar,beat until smooth.

    This is wonderful. Very moist and delicious.

    Banana Pecan Cake w/Banana Frosting

    1 cup butter (softened)
    2 1/2 cups sugar
    2 cups mashed bananas
    4 eggs (beaten)
    3 3/4 cups all-purpose flour
    2 tsp. baking soda
    1 cup buttemilk (room temp)
    1 tsp. vanilla extract
    2 TBS. bourbon or orange juice
    1 cup chopped pecans (optional)

    ICING
    1/2 cup mashed bananas
    1 tsp lemon juice
    1/3 cup butter (soften)
    1 box powered sugar, sifted
    3 to 4 TBS. milk
    2/3 cup chopped pecans (optional)

    Cream butter, add sugar, beat well at medium speed. Add bananas; mix until smooth, stir in eggs. Combine flour and soda. Add the banana mixture, alternating with buttermilk beginning and ending with flour. Stir in vanilla, bourbon and pecans. Mix well. Pour batter into 3 greased and floured 9 in. round cake pans. Bake at 350° for 35 to 40 minutes.

    ICING
    Combine bananas and lemon juice, mix and set aside. Cream softened butter at meduim speed; add powered sugar and milk, mixing well. Add banana and lemon juice beating mixture until fluffy. Stir in pecans (if any). Spread between layers and on top and sides of cake.

    You can freeze banana's too...just leave them skin on, and place in freezer.

    When ready to use thaw on your countertop. Only use in baking, don't eat!

    I made up this recipe a few months ago based on a couple other tried and true recipes. the caramel frosting isn't like gooey caramel, but rather it is like pralines.


    Oatmeal Banana Chunk Bars with Caramel Icing

    Bars:
    2 cups all-purpose flour
    1/2 tsp baking powder
    1/4 tsp baking soda
    1/2 tsp salt
    3/4 cup butter
    2 cups packed light brown sugar
    2 large eggs
    2 cups quick cooking oats
    1 cup diced banana (from about 1 ½ ripe but
    firm bananas)
    Caramel Icing:
    1/4 cup butter
    1/2 cup packed dark brown sugar
    2 tbsp milk
    1 cup confectioners' sugar -- sifted
    1 cup chopped pecans

    Preheat oven to 350. Grease a 13x9 baking pan with nonstick cooking spray.
    In a medium bowl, combine flour, baking powder, baking soda, and salt. Set aside. Cream the butter and brown sugar. Add the eggs, one at a time, and beat until blended. Add the flour mixture slowly, mixing just until blended. Mix in the oats on low speed. Gently stir in the banana by hand until just combined. Spread batter in prepared pan and bake for 25 minutes. Put on a wire rack to cool.
    While the bars are cooling, make caramel icing. Put ¼ cup butter and ½ cup dark brown sugar in a medium saucepan and cook and stir over medium heat until mixture comes to a boil. Add milk and bring the mixture back to a boil. Remove from heat and add confectioners' sugar. Stir vigorously until the mixture is smooth. While it is still warm pour it over the warm bars and spread to cover evenly. Work quickly so the icing doesn't harden. Immediately sprinkle chopped pecans evenly over the icing. When completely cool, cut into 18 bars.

    Asleigh, I already have a bunch of bananas in the freezer....lol, had some company and bought xtra last week and no one ate the nanas!! Nice to see you back!

    Here is my MIL's banana pudding recipe. I have to warn you it is huge. A normal one would probably be 1/3 this amount. My DH's family is huge and they love banana pudding.

    3 boxes Nilla vanilla wafers
    3-4 bunches ripe bananas, sliced
    (You could make 1/3 of this recipe and have a normal size pudding)
    Alternately layer bananas and wafers in large metal bowl, ending with vanilla wafers.

    Custard:
    5 c. milk
    1 c. water
    1 c. sugar
    6 egg yolks
    1 c. all-purpose flour

    In large saucepan, combine milk, water, sugar, egg yolks, and flour.
    Cook over medium heat, stirring constantly, until thickened. Pour over bananas and vanilla wafers.

    Meringue:
    6 egg whites
    1/2 c. sugar
    Beat egg whites and sugar together on high until stiff peaks form. Spread over pudding. Make peaks in meringue. Bake in preheated 500 degree oven for about 5 minutes or until peaks are golden brown.

    OLD FASHIONED BANANA CAKE

    2-1/4 cups sifted flour
    1-2/3 cups sugar
    1-1/4 tsp. baking powder
    1-1/4 tsp. baking soda
    1 tsp. salt
    2/3 cup evaporated milk
    4 tsp. lemon juice
    2/3 cup butter or margarine, softened (I prefer butter)
    1-1/2 cups mashed, ripe bananas
    3 eggs

    In a large bowl, sift the first five ingredients. Mix evaporated milk, lemon juice, butter and bananas. Gradually add flour mixture, beating at medium speed for 2 minutes. Add eggs. Beat 2 minutes. Pour into a greased and floured 9 x 13 cake pan and bake at 350 deg. for 40 minutes or until done. (Can also use two 8-inch round cake pans. Frost with vanilla powdered sugar frosting and sprinkle with chopped pecans or walnuts.

    Thanks for more recipes!!! Seeing how I never did get the time to make anything yet, just ended up sticking the bananas in the freezer after all...have a get together to go to this weekend and was thinking of making something banana to take along!
