    Blueberry Sorbet

    4 cups fresh or thawed, frozen blueberries
    1 can (6 ounces) frozen apple juice concentrate

    In the container of a food processor or blender, combine blueberries and apple juice concentrate; whirl until liquefied. Pour into an 11 x 7-inch baking pan. Cover and freeze until firm around the edges, about 2 hours. With a heavy spoon, break frozen mixture into pieces. Place mixture in a processor or blender container; whirl until smooth but not completely melted. Spoon into a 9 x 5-inch loaf pan; cover and freeze until firm. Serve within a few days.

    Yield: 6 portions, 4 cups
    Per portion: 112 calories, 1 gram protein, 1/2 gram fat, 28 grams carbohydrate

    Blueberry Crumble

    4 cups fresh or frozen, thawed blueberries
    1 to 2 tablespoons suage
    3 tablespoons butter, softened
    3 packages (1.5 ounces each) instant oatmeal with maple and brown sugar

    Preheat oven to 375*F. In a 9-inch pie plate, toss blueberries with sugar. In a small bowl, combine butter and instant oatmeal until mixture forms coarse crumbs; sprinkle over blueberries. Bake until mixture bubbles around the edge and topping is light brown, 30 to 35 minutes.

    Yield: 6 portions
    Per protion: 197 calories, 3 grams protein, 7 grams fat, 33 grams carbohydrate

    Blueberry Tortilla Pizza

    1/2 cup ricotta cheese or whipped cream cheese
    1 tablespoon confectioners sugar
    1 pint fresh blueberries
    1/2 cup sliced strawberries
    1 large (10-inch) flour tortilla
    1 tablespoon butter, melted
    2 teaspoons cinnamon sugar
    1/4 cup toasted shredded coconut, divided

    Preheat broiler. In a small bowl, combine ricotta cheese and confectioners sugar; set aside. In another small bowl, combine blueberries and strawberries. Arrange tortilla on a broiler pan; brush with butter and sprinkle with cinnamon sugar. Broil about 6 inches from heat source, until lightly browned, about 3 minutes. Cool slightly. Spread ricotta mixture on the tortilla; top with blueberry mixture and then sprinkle with coconut.

    *To toast coconut, place in a skillet over moderate heat until pale gold, stirring constantly.

    Yield: 4 portions
    Per portion; 210 calories, 5 grams protein, 10 grams fat, 25 grams carbohydrate

    DOUBLE BLUEBERRY PIE

    1 frozen or homemade pie shell (9 inch)
    1 jar (16 ounces) blueberry jam or fruit spread
    1/4 teaspoon ground cinnamon
    2 cups fresh blueberries
    Sweetened whipped cream or vanilla ice cream (as needed)

    Following package or recipe directions, prebake pie shell; cool. In a microwaveable dish, combine blueberry jam and cinnamon. Microwave on high until mixture liquefies, about 1minute. Stir in fresh blueberries. Spoon blueberry mixture into prepared shell. Chill. Serve with whipped cream or vanilla ice cream.

    YIELD: 6 portions

    This five-ingredient pie gets a delicious double whammy from fresh blueberries and blueberry jam.

    BLUEBERRY-KIWI DESSERT PIZZA

    1 package (18 ounces) refrigerated cookie dough
    1 cup prepared marshmallow fluff (from a 7-1/2 ounce jar)
    2 cups fresh blueberries
    1 kiwi, peeled, halved and sliced
    1/4 cup chopped walnuts

    Preheat oven to 350°F. Slice cookie dough as directed on package. Arrange slices in bottom of an ungreased 14-inch pizza pan. Using floured fingers, press dough evenly in pan. Bake until golden brown, about 15 minutes; cool. Spread marshmallow fluff over cookie crust, leaving a 1-inch border around the edges. Arrange blueberries and kiwi slices on top. Sprinkle with chopped walnuts.

    Blueberry-Orange Dessert Pizza: Substitute 1 can (8 ounces) mandarin oranges, drained, and 1/4 cup coarsely chopped pistachios for the kiwi and walnuts.

    YIELD: 8 portions

    BLUEBERRY AND GOAT CHEESE SALAD

    4 cups mixed salad greens
    3 to 4 ounces goat cheese or other soft cheese
    1 cup fresh blueberries
    1/2 cup pecans or walnuts*
    1/4 cup prepared Italian or balsamic dressing

    Arrange greens on four salad plates, dividing evenly. Slice or shape goat cheese to form four rounds; arrange in center of each plate. Sprinkle blueberries and pecans on greens. Drizzle dressing over salads.

    YIELD: 4 portions

    * To crisp nuts and bring out their full flavor, toast them in a 300º F oven for about 5 minutes.

    TANGY BLUEBERRY CHUTNEY

    1/2 cup chopped onion
    1/4 cup sugar
    1/4 cup golden raisins
    1/4 cup cider vinegar
    1 cup fresh blueberries, divided

    In a small saucepan, combine onion, sugar, raisins and vinegar; bring to a boil; reduce heat and simmer until sugar dissolves, about 3 minutes. Add 1/2 cup of the blueberries; simmer until saucy, about 5 minutes. Add the remaining 1/2 cup blueberries; simmer 1 minute longer. Serve with chicken, pork tenderloin or ham.

    YIELD: about 1 cup

    Blueberry Squares
    Bottom:
    2 cups graham cracker crumbs
    3 tbsp.white sugar
    1/2 cup melted margarine
    Combine ingredients together,press
    into 9x13 square pan.Bake 8 min.
    Let cool.
    Top:
    1 large container cool whip
    8 ozs.pkg.cream cheese
    1/2 cup white sugar
    3 cups fresh or frozen blueberries
    Beat cream cheese and sugar well.
    Add cool whip and beat again.Add
    blueberries and mix.Spread over
    crust,put in fridge to set.Store
    leftovers in fridge.

    I love blueberry anything and read about Star's bushes and early morning blueberry picking with envy. The season is quite short where I live and the berries aren't local so are very expensive...$2.99 and $3.99 for a scant pint (sometimes more)! As you know, a pint doesn't go far. If you're lucky they come on special every so often for $1.99. Anything you make with fresh berries is a real treat. I've printed out a couple of these recipes and will give them a try the next time berries are "affordable". Thanks for posting.

    Star, are you in Michigan?!? I've never seen anyone with a bluberry bush in Missouri! I would LOVE to go picking every morning!!! LOL!!!

    I have about 5 blueberry bushes -love them! I hope to add to them next year.
    This is a great pie recipe.

    BLUEBERRY PIE (10-inch pie)
    Pastry for 2-crust 10-inch pie
    2/3 cup sugar
    1/4 cup plus 2 Tbsp. flour
    1/2 tsp. cinnamon
    5 1/2 cups fresh blueberries
    1 1/2 Tbsp. lemon juice
    2 1/2 Tbsp. butter
    Heat oven
    Preheat oven to 425 degrees. Prepare pastry. Stir together sugar, flour and cinnamon; mix lightly with berries. Turn into pastry-lined pan; sprinkle with lemon juice and dot with butter. Cover with top crust which has slits in it. Seal. I always use my pie edge protector to keep edge from browning (or aluminum foil around edges). Bake about 35 minutes or until nicely browned. I let mine cool to room temperature before slicing.

    Hi Cittie; Here's a few more for you!

    Blueberry Cake
    1/2 cup butter or margerine
    1 cup white sugar
    2 eggs
    3/4 cup milk
    2 cups all purpose flour
    2 tsps.baking powder
    1 tsp. lemon flavoring
    1 1/2 cups blueberries

    Topping
    3/4 cup brown sugar
    1/4 tsp. cinnamon

    Method:
    Cream butter and sugar.Add beaten eggs.Sift dry ingredients and add alternately with milk.Add flavoring and fold berries in last.Put in greased and floured 8 or 9" sq. pan.Mix brown sugar and cinnamon.Sprinkle on top of mixture.Bake at 350 for 40 min. or till done when tested.

    Blueberry Meringue Cake
    1/2 cup margerine
    1 tsp.vanilla
    2 egg yolks
    1/2 cup milk
    1/2 cup white sugar
    2 tsps. baking powder
    1 cup flour
    1/2 tsp.salt
    Mix together and bake at 325 degrees for 25 min.

    Topping
    2 egg whites
    1 cup brown sugar
    2 cups fresh blueberries
    Beat egg whites and gradually add sugar till peaked.Add blueberries gently and spread over bottom mixture.Return to oven and brown meringue lightly.

    You are SO lucky, Star!!! I'm jealous! But I heard from deranger, and she has blueberry bushes in Missouri, so I guess there is hope for me afterall!!! Enjoy those berries & I will post my favorite fresh blueberry recipe!
