    JMartinelli 13's Favorite Recipes

    Some of these I've posted before, but it will be nice to have them all in one place. Hope someone finds something they might like to try. This is a great idea, thanks to those who thought of it and are keeping it organized! I am 35 weeks pregnant and I'm lucky if I can get through the day without losing something!

    "The Chewy" Chocolate Chip Cookie

     

    2 sticks unsalted butter
    2 1/4 cups bread flour
    1 teaspoon kosher salt
    1 teaspoon baking soda
    1/4 cup sugar
    1 1/4 cups brown sugar
    1 egg
    1 egg yolk
    2 tablespoons milk
    1 1/2 teaspoons vanilla extract
    2 cups semisweet chocolate chips
    Hardware:
    Ice cream scooper (#20 disher)
    Parchment paper

    Heat oven to 375 degrees F. Melt the butter in a heavy-bottom medium saucepan over low heat. Sift together the flour, salt, and baking soda and set aside. Pour the melted butter in the mixer's work bowl. Add the sugar and brown sugar. Cream the butter and sugars on medium speed. Add the egg, yolk, 2 tablespoons milk and vanilla extract and mix until well combined. Slowly incorporate the flour mixture until thoroughly combined. Stir in the chocolate chips. Chill the dough, then scoop onto parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 minutes or until golden brown, checking the cookies after 5 minutes. Rotate the baking sheet for even browning. Cool completely and store in an airtight container.

    NOTES : Can use M&M's in place of chocolate chips. Baking time varies slightly.

    Apple Crisp

    7 1/2 to 8c sliced baking apples
    1 1/2 cups flour
    1 1/4 cups packed brown sugar
    1 stick butter -- melted and cooled
    1 1/2 teaspoons baking powder
    1 1/2 teaspoons ground cinnamon
    1 1/2 teaspoons salt
    3/4 teaspoon ground nutmeg
    1 egg
    Ice cream -- if desired

    1. Heat oven to 350ºF.

    2. Arrange apples in ungreased square baking dish, 13 x 9 inches.

    3. Stir together remaining ingredients except ice cream until crumbly; sprinkle over apples. Bake 35 to 45 minutes or until apples are tender. Serve warm with ice cream, if desired.

    Baked Crusty Chicken

    1/2 cup bread crumbs
    1/2 cup flour
    1 tablespoon fresh parsley
    1 teaspoon dried basil
    1/2 teaspoon salt
    1/2 teaspoon paprika
    1/4 teaspoon pepper
    juice of one lemon
    2 tablespoons butter -- melted
    2 tablespoons oil
    3 -4 pound chicken, cut in 8 serving pieces

    Heat oven to 350. Combine crumbs, flour, parsley, basil, salt, paprika, and pepper. Place in bag, shake to mix. Combine juice, butter and oil. Add chicken, turn pieces to coat. Shake chicken in crumbs, coat evenly. Place on 15x10 baking sheet. Bake for 45 mins. Preheat broiler. Broil 5 to 8 mins or until golden brown.

    Basic Pizza Dough

    1 package yeast
    1 cup warm water
    1 tablespoon sugar
    2 tablespoons oil
    1 teaspoon salt
    2 3/4 to 3 1/4c flour

    Dissolve yeast in water in 3qt bowl. Stir in sugar, oil, salt and 1c flour. Beat until smooth. Add enough flour to make dough easy to handle. Knead dough until smooth and elastic, about 5 mins. Place in greased bowl, flip to grease other side. Cover and let rise until double, about 30 mins.

    *Bread Machine Instructions: Layer ingredients in pan in order recommended by Mfr. Choose dough setting.

    Chicken Parmesan Stromboli

    1 pound boneless chicken
    2 teaspoons olive oil
    2 cups shredded mozzarella cheese
    28 ounces chunky garden style sauce
    1 tablespoon parmesan cheese
    1 pound bread dough (i use basic pizza dough recipe, above)

    Preheat oven to 400. Sprinkle chicken with salt and pepper. In 12" skillet over med high heat oil and brown chicken. Remove and let cool. Pull into large shreds. Combine chicken, mozzarella, 1/2 sauce, parmesan, and 1T fresh parsely (optional). Press dough to 10x12. Arrange chicken mixture down center of dough. Fold long sides over, pinch to seal. Arrange on sheet, seam side down. Bake 35 mins or until golden. Cut into slices and serve with remaining sauce.

    Pepperoni Calzone

    Basic Pizza Dough (recipe above)
    8 ounces tomato sauce
    1 teaspoon basil
    1 teaspoon oregano
    1 clove garlic
    8 ounces pepperoni
    1 cup shredded mozzarella cheese
    1 egg -- beaten

    Divide dough into 4 parts. Mix 1st 4 ingredients. Heat through. Flatten dough to circles. Top with meat and cheese. Fold over, pinch edges to seal. Place on greased cookie sheet. Let stand 15 mins. Heat oven to 375. Brush with egg. Bake 25 mins.

    *Beef Calzones: cook 1 pound ground beef, 1t salt and medium onion. Drain, substitute for pepperoni.

    My great aunt used to make these and when she passed away, the recipe was lost. I found this on the internet and it's very close. Making these brings back lots of good memories.

                                 Chocolate Totos


      3               cups  all-purpose flour
      4          teaspoons  baking powder
         3/4           cup  sugar
         1/2      teaspoon  allspice
         1/2      teaspoon  cinnamon
         1/2      teaspoon  nutmeg
         1/4           cup  unsweetened cocoa powder
      2             sticks  butter -- softened
         1/3           cup  milk
      1           teaspoon  vanilla extract
         1/2           cup  chopped walnuts
      2            squares  unsweetened chocolate -- (1 ounce each)
      1         tablespoon  butter -- softened
      1           teaspoon  vanilla extract
      2               cups  powdered sugar
         1/4           cup  hot milk

    Preheat oven to 375 degrees.  Sift 3 cups flour twice. In a large bowl, mix flour, baking powder, sugar, cinnamon, allspice, nutmeg and cocoa. Cream 1 cup butter or margarine; blend into flour mixture. Add 1/3 cup milk, 1 teaspoon vanilla and nuts. Mix thoroughly with hands until well blended. (Dough should be the consistency of pie crust, but not sticky.) 

     For each cookie, pinch off about 1 teaspoon dough. Roll by hands into balls, each about one-inch in diameter. Place on greased baking sheets. Do not flatten. Bake about 10 minutes, until lightly browned. Remove from baking sheets; cool on racks. When cool, drizzle each generously with chocolate frosting. Sprinkle with crushed nuts. 

    To make Chocolate Frosting: Melt the chocolate squares over low heat. Cream with 1 tablespoon of butter or margarine, 1 teaspoon vanilla and 2 cups of confectioner's sugar. Gradually add hot milk, beating until smooth.

    My sister made this for my baby shower. I substitute vanilla for the almond extract because my husband is allergic to nuts, but it's great with either.

    Coconut Cake
    Pampered Chef

    1 package white cake mix -- plus ingredients to make cake
    1 teaspoon vanilla
    Frosting and filling
    3/4 cup cold milk
    1 package white chocolate instant pudding
    1/4 cup powdered sugar
    8 ounces Cool Whip® -- thawed
    1/3 cup cherry jam
    1 cup sweetened coconut flakes

    Preheat oven to 325. Cut circle of parchment paper to fit bottom of springform pan. Spray pan with Pam, place parchment paper in pan. Prepare cake mix according to package directions, adding vanilla with water. pour batter into pan. Bake 60 to 65 mins or until center tests clean. Cool on rack 10 mins, run knife around edge and release from pan. Cool completely.

    Place cooling rack over top of cake, invert, remove bottom of pan and parchment, invert cake onto serving plate. Cut cake in half. Combine milk, pudding mix and powdered sugar. Whisk 1 to 2 mins or until pudding begins to thicken. Fold in cool whip.

    To assemble cake: spread jam over bottom half of cake. Spread 1c frosting over jam. Top with remaining cake layer. Spread top and sides of cake with frosting. Gently pat coconut over cake. Refrigerate 1 hour.

    Italian Sausage Lasagna

    1 pound italian sausage
    1/2 cup onion -- chopped
    1 clove garlic
    2 tablespoons parsley
    1 teaspoon sugar
    1 teaspoon basil
    1/2 teaspoon salt
    16 ounces whole tomatoes
    15 ounces tomato sauce
    12 ounces lasagna noodles -- uncooked
    16 ounces ricotta cheese
    1/4 cup parmesan cheese
    1 tablespoon parsley
    1 1/2 teaspoons oregano
    2 cups mozzarella cheese
    1/4 cup parmesan cheese

    Cook and stir sausage, onion and garlic until brown, drain. Stir in 2T parsley, sugar, basil, 1/2t salt, tomatoes, sauce; break up tomatoes. Heat to boiling, reduce heat. Simmer 45 mins. Cook noodles according to package directions, drain. Mix ricotta, 1/4c parmesan, 1T parsley and oregano. Spread 1c sauce in 13x9, top with 4 noodles. Spread 1c cheese mixture. Spread 1c sauce mixture. Sprinkle with 3/4c mozzarella. Repeat with 4 noodles, remaining cheese mixture, 1c sauce, and 2/3c mozzarella. Top with remaining noodles, sauce mixture, mozzarella and parmesan. Bake uncovered at 350 for 35 mins, let stand 15 mins before serving.

    Jolene's Quick Chicken Parm

    6 boneless chicken breasts
    2 tablespoons butter -- melted
    1/2 cup parmesan cheese
    1/4 cup bread crumbs
    1 teaspoon oregano
    1 teaspoon parsley
    1/4 teaspoon paprika
    1/4 teaspoon salt
    1/4 teaspoon pepper

    3/4 cup tomato sauce
    1 cup mozzarella cheese

    Heat oven to 400. Dip chicken in butter, coat with combined remaining ingredients. Place in 13x9 pan. Bake 20 to 25 mins. Top with sauce and cheese, bake 5 to 10 mins more, or until cheese is melted.

    Mom's Meatball Recipe

    2 pounds ground beef
    1 pound ground pork
    2 tablespoons parsley
    2 eggs
    2 teaspoons salt
    1 teaspoon pepper
    1/2 teaspoon garlic powder
    1 1/2 cups bread crumbs
    dehydrated onion -- to taste
    1 tablespoon hot sauce
    1/2 cup red wine

    Mix all ingredients except red wine together. Shape into balls, about 36. Brown in electric or regular frying pan. Add red wine. Cover and simmer for 30 to 60 mins. Remove meatballs with slotted spoon to crockpot. Add 1 jar spaghetti sauce. Heat through for several hours.

    Parmesan Herb Chicken

    1 cup parmesan
    1/8 cup fresh parsley -- minced
    1 teaspoon oregano
    1 teaspoon paprika
    1/2 teaspoon salt
    1/2 teaspoon pepper
    6 chicken breasts
    1/2 cup butter -- melted

    In shallow dish, combine all ingredients except butter and chicken. Dip chicken in butter, then in parmesan mixture. Place in greased 15x10 baking pans. Bake, uncovered at 350 for 40 to 45 mins or until juices run clear.
