    Low carb soups--good even if your not low carb :)

    Cheese Cauliflower Soup (Crockpot)

    6 servings (1.5 c ea) 10.5 g. carb

    2 bags frozen cauliflower
    1 med onion chopped
    1 stalk celery chopped
    4 c chicken stock
    2 c cream
    1/2 t Worcestershire sauce
    1 c cheddar cheese grated
    salt/pepper

    Put cauliflower, onion, celery and chicken stock in crockpot. Cover and cook on low for 6-8 hrs. Puree in blender. Return to crockpot. Blend in cream, worcestershire and cheese. Add seasonings to taste. Stir to mix well. Turn control to high to heat through.

    Fabulous Asparagus Parmesan Soup

    14.5 oz can asparagus, including juice
    1/2 c cream
    1/4 c parmesan cheese
    salt & pepper to taste

    Add all to blender and combine. Transfer to soup pot and heat to desired temperature. (This is one of my favorite soups!)

    Serves 2

    Each serving= 280 cal; 25 g fat; 7 g carb; 2 g fiber, 9 g protein= 5 net carbs.

    Chicken Chipolte Soup ***spicy***

    32 oz Chicken broth
    1 can Cream of Chicken Herbs soup
    1 can water
    4 canned chipolte chiles, rinsed
    1 Tablespoon peanut oil (any oil would be fine)
    1/2 onion, sliced
    1 Tablespoon minced garlic
    4 Boneless, skinless chicken breasts, cubed

    Avocado- diced
    Jack Cheese-diced
    Cilantro-chopped

    Cook onion in large sauce pan in oil. When it starts to brown, add garlic and cook for another minute or two. Add chicken broth and can soup w/ water, bring to boil, reduce to medium heat. Add chiles and chicken and cook until chicken is cooked through.

    Put serving in bowl, top with avocado, cheese and cilantro.

    Makes 4 big servings, carbs-8.5 each

    Broccoli Cheese Soup

    2 cans chicken broth
    2 bags frozen chopped broccoli
    3/4 lb American cheese, cut into cubes
    salt and pepper

    Bring broccoli and broth to boil, simmer 5 minutes, and add American Cheese cubes. Heat on low until cheese melts, add salt and pepper to taste. If soup is too thick, add heavy cream to thin to desired consistency.

    Makes 6 servings. Approx 4 carbs per serving.

    Ham and Cheese Soup

    1 T olive oil
    1/2 c onion chopped
    1/2 c celery chopped
    1/4 c green pepper chopped
    1T garlic chopped
    1 c ham diced
    4 c chicken broth
    1 bay leaf
    1/2 t basil
    1/4 c cream
    1 c Cheddar cheese grated.
    Fry onions, celery, pepper and garlic till tender. Add ham and fry to release some oil and meld the flavors. Add stock, bay leaves and basil. Simmer 20-30 min. Add cream and bring back to a gentle boil and slowly add cheese stirring constantly. Serve immediately.

    4 servings

    Per serving: 302 cal; 21 g protein; 5 g carb; 1 g fib

    Chicken :)-Cabbage soup



    1 whole chicken
    1 med onion, chopped
    3 celery ribs, chopped
    1/2 head of cabbage, shredded or finely sliced
    water
    salt and pepper to taste

    Put whole chicken in a large stock pot with about 8 quarts of water. Chop onion and celery and add to the pot, and salt and pepper the mixture.

    Cook on low-med. heat til the chicken is fully cooked, probably about 2 hours. Remove chicken from pot and de-bone.

    Chop boned chicken into into manageable size and put back in the pot. Add the cabbage and cook another 10-15 minutes or so. Adjust seasoning to taste. Add a few shakes of ground parsley for color if you want to.

    A real 'comfort food' for those cold winter days. Enjoy!

    I know just what you mean -- I had to dig around for these because I want beans and cornbread...what a NO NO! I'm going go fix something now before I eat the sofa :)

    Vegetable Beef Stew

    2 pounds stew meat
    3 T olive oil
    2 stalks celery
    2 C broccoli
    2 C cauliflower
    1 cans green beans
    2 T dried parsley
    2 cans beef broth
    1/2 C green onion
    1 can tomato sauce

    In a large skillet brown stew meat in olive oil. Put beef broth, tomato sauce and 1 cup water into crockpot. Add herbs, celery, green onion, 1/2 C cauliflower, and 1/2 C broccoli. (This will help thicken stew). Add cooked meat.

    Cook on high for 1 hour. Turn down to low and cook for 1-2 hours more. Add remaining vegetables and cook until done. Serves 6 at 6.5g per serving

    Texas Chili


    4 lbs of ground chuck
    2 medium onions, chopped
    4 cloves garlic, chopped
    4 tsp salt
    2 tsp paparika
    2 tsp cayenne
    3 tsp ground chipolte (dried, smoked jalapeno)
    4 tsp chili powder
    6 tsp ground cumin
    2 tsp whole cumin seed
    1 tsp oregano
    2 - 8 oz cans tomato sauce
    4 - 8 oz cans water


    Saute meat in hot pan until sizzle is gone, add onions and garlic. When meat is browned and onions opaque, add all ingrediants.

    Bring to a rolling boil, reduce heat and simmer for 1 - 1 1/2 hours, stirring occasionally and skimming off grease. Serve with grated chedder cheese and sour cream.

    Cream of Tomato Soup

    The carb count on this is a little high, about 9-10 per serving, but it is very rich and comforting.

    2 28 oz cans of peeled whole tomatoes packed in tomato juice
    1/4 cup chopped shallots
    2 cups tomato juice
    2 cups chicken stock
    1/2 cup heavy cream

    Drain the tomatoes, saving the tomato juice. Seed the tomatoes and lay flat on a baking sheet. Sprinkle with salt and pepper and roast in the oven until they start to darken.
    Saute the shallots in butter/ olive oil until clear. Add tomato juice and chicken stock and bring to a simmer.
    When the roasted tomatoes are ready, scrap into the juice/stock mixture. I deglaze the roasting pan with a little of the liquid and add to the pot.

    Let simmer until the tomatoes have absorbed some of the liquid. Either using a blender or a hand held blender, mix until smooth. Add the cream and stir in right before serving.

    Thanks so much for these soup recipes. I'm trying to get in the mindset of low carb. My husband has lost 29 lbs. These soups will be great this winter!

    Linda, thanks for the recipes. They sound great. I have already made the broccoli cheese soup and I can tell you it is delicious. Have made it several times. Mmm Mmm good :o)

    Also, wanted to tell you I tried black soy beans and they really are very good. Especially if you make chili or seasoned soups with them. They only have 1 net. carb in a half a cup. So maybe they would help you when you are having a craving for beans. Give them a try.
