    ?? Freeze Bananas

    Can you mash very ripe bananas and freeze them then make banana bread in the future? I've got a couple bananas I have to do something with and I'm still eating my last loaf of bread. By the time I'm ready for more bread (and I prefer it to be freshly baked), the bananas will have had to be trashed.

    Yes, mash away. You could add a pinch of lemon juice to help prevent them from browning, but you don't have to. You can then measure out the amount you need for a recipe and freeze it in a freezer bag.

    You can freeze them in or out of the peelings. Mashed or unmashed. No problems.

    I put very ripe bananas in the freezer whole. Leave the skin on. They only take a few minutes to thaw. Only use them in baking, don't eat them. I've been doing this for years.
