    Salsa

    Have lots of Tomatoes.
    At one time I had a wonderful recipe that included onions, tomatoes, cilantro, garlic,. It made a great chip dip. Does anyone have this recipe. I recieved my recipe from a gal that lived in Mexico. I think she also put some lime in it. Anybody have an good recipe.

    I made salsa last weekend to can.Recipe;
    10 cups peeled,chopped tomatoes
    5 cups chopped green peppers
    5 cups onions
    1 Tbsp kosher salt
    3/4 cup apple cider vinegar
    3 6oz cans tomato paste
    1 1/2 cups chopped jalepeno peppers

    Mix all together in large pan bring to a boil, simmer 10 minutes.
    Put in sterilized jars, & cold pack can for 15 minutes. Yum, not too spicy.

    8 Roma tomatoes, chopped
    1 small onion, chopped
    1 small can diced green chillies
    1 cup cilantro, chopped
    1 t. salt
    1 T. lime juice

    Mix together. Chill for 1 hour before serving.

    This is my favorite salsa recipe.


    FRESH TOMATO SALSA

    1 1/2 cups diced fresh tomatoes
    1-2 tablespoons diced fresh jalapenos
    3 tablespoons diced green onion
    2 tablespoons finely chopped cilantro
    1 tablespoon fresh lime juice
    1-2 cloves garlic, minced
    1/4 teaspoon salt

    In medium bowl, combine all ingredients. Let stand, covered, at room temperature for 30 minutes. Enjoy!

    I usually make a double batch of this, and it never lasts long!

    Just wanted to let you know that the Salsa recipe was a huge success. Made it with my girls and they whined and complained about the yucky looking ingredients. But boy did it disappear in a hurry. Wonderful tasting!!!!!
