    Cider Salad

    Cider Salad
    2 c. apple cider
    2 3ounce packages cherry jello
    1/4 teasp. cherry flavoring
    1 16ounce can pitted cherrys
    1/2 c. sliced celery
    1/2 c. chopped walnuts
    1 3ounce package softened cream cheese
    1 c. applesauce
    1/2 teasp. cinnamon flavoring

    In a small pan bring the apple cider to a boil. Dissolve the jello and cherry flavoring in the hot cider. Drain the cherrys. Reserve the cherry juice. Add enough water to the juice to make 1 1/2 c. and stir into the jello. Reserve 2 cups of the jello mixture and keep it at room temperature. Refrigerate the remaining jello until it is partially set. Fold in the cherrys, celery and walnuts. Pour the mixture into a 6 1/2 c. ring mold. Chill until it is almost firm. In a bowl gradually add the reserved jello to the cream cheese and beat it until it is almost smooth. Stir in the applesauce and the cinnamon flavoring. Spoon over the first layer and chill it until it is firm.
