    Bar Cookies

    I have been asked to make a bar cookie instead of a birthday cake for a lady that does alot of baking. The daughter asked me to make something that is different from the usual bar cookies. She told me that her mom likes anything with caramel, nut or lemon, not so much chocolate.

    I have a lemon bar recipe, but I'll have to post tonight if you're interested - I'm at work. Also, the current TOH has a whole tear-out section of bar cookies from their Best Bar Cookie Recipe contest. Mine is the Apple Pie Bars.

    Lemon Bars

    CRUST

    2 cups flour
    1/2 cup powdered sugar
    1 cup butter or margarine

    FILLING

    4 large eggs
    2 cups sugar
    1 tsp. lemon zest
    1/3 cup lemon juice
    1/4 cup flour
    1 tsp. baking powder

    Mix crust ingredients as for pie crust; press into 9x13" pan, making sure crust goes up partially up the sides to hold filling. Bake at 350F for 20-25 minutes until light brown. Beat filling ingredients and pour over crust - will be thin. Return to oven and bake for 20 minutes. Cut into squares while warm. Sprinkle with powdered sugar when cool.
