    Kabob Help

    Hi all you wonderful folks out there in cooking land!!! For my son's wedding rehersal dinner, I thought it would be nice to do Chicken Kabobs. The rehersal is outdoors so we can have the grill there. I have found lots of wonderful chix recipies, however, when I soak the wooden skewers, how long do I soak them and how long can they be out of the water before putting on the grill? I want to take them ready to grill. Many thanks..

    They need to soak at least 30mins. The point of soaking them is so they will not burn. If it will be quite a while between preparation and when they go on the grill they will dry out. I soak mine and put them together right before they go on. You don't want them to even partially dry out. I would wait and soak them and then put them right on the grill. If this is not possible, and you want to make them ahead look at your local $ store for skewers. You can get 4-6 for $.99. They are metal so you can prepare them ahead of time.

    And another suggestion. Make separate skewers of your chicken and veg. The chicken takes longer to cook, so it's a lot easier if you do some chicken skewers and some vegetable ones. You can cook each part of the meal to the proper doneness without ending up with burned veg.

    And I like using 2 parallel skewers, instead of threading the meat or veg on just one--much easier to handle and turn. (the food doesn't 'spin' that way).
