    Pumpkin Parfait

    Ingredients

    1 16-oz. can pumpkin
    1/3 c. brown sugar, packed
    1/3 c. apple juice concentrate, thawed
    2 tsps. pumpkin pie spice
    1 1/2 c. nonfat vanilla yogurt
    1 c. light whipped topping, divided
    1/4 c. fat-free granola

    Directions

    Mix pumpkin, brown sugar, apple juice concentrate, and pumpkin pie spice with 1/2 c. of whipped topping.

    Layer pumpkin mixture and yogurt alternately in a round casserole dish or in 6 individual parfait or wine glasses. Top with reserved 1/2 c. of whipped topping and granola.

    Make 6 servings.

    That sounds really, really yummy. Thanks for sharing. I'll print it out and make for next week when my father comes up to see us.
