I haven't tried this recipe, but it sounds really good!
NACHO CHEESECAKE
1 1/4 c tortilla chips, crushed
1/3 c cheddar cheese, grated
1/4 c margarine, melted
32 oz cream cheese, softened
6 eggs
1/4 c onion, chopped
1 t liquid hot pepper sauce
1/2 t garlic salt
1 1/2 c cheddar cheese, grated
1/2 c Monterey Jack cheese, grated
1 t jalapeño, chopped
1 1/4 c sour cream, divided
1/4 c beer (cook's bonus: Drink the rest!)
1 T cornstarch
1 T medium hot taco sauce
1/2 c green olives, chopped
2 T pimientos, chopped
1/2 c green onion, chopped
1 pound bag of tortilla chips
Preheat oven to 350 degrees.
In a medium bowl combine 1-1/4 cups finely crushed tortilla chips, 1/3 cup grated cheddar cheese, and melted margarine; mix well. Press over the bottom of a 10" springform pan.
In another bowl beat softened cream cheese and eggs until light and fluffy. Add chopped onion, liquid hot pepper sauce, garlic salt, and Worcestershire sauce; mix well. Stir in 1-1/2 cups grated cheddar cheese, grated Monterey Jack cheese, chopped jalapeno, 1/4 cup sour cream, beer, and cornstarch.
Pour into the prepared pan and bake for 1 hour. Turn the oven off and open the door. Cool completely in the oven. Spread a mixture of 1 cup sour cream and taco sauce over the cheese mixture. Sprinkle with chopped green olives, chopped pimiento, and chopped green onions. Cut into thin slices and serve with 1 pound tortilla chips.
