You could use butter & oil for the saute, if you like. The unique flavor comes from dark sesame oil in the dressing. For the vinegar, I usually use red wine vinegar, but you could use tarragon if you prefer.
Asian Slaw
½ head chopped cabbage, shredded, e.g. bok choy, Napa, or Savoy
1/3 cup diced onions, green onions w/ tops add color
1/4cup sesame seeds,
1 pkg. ramen noodles, broken up
1/4cup chopped peanuts, slivered almonds, pecans, walnuts or cashews
Dressing:
2 Tbs. vinegar
3 Tbs. veg. oil
1 Tbs. dark sesame oil
1 Tbs. soy sauce
1/4cup sugar
Stir fry the sesame seeds and noodles in 1 Tbs. oil. If nuts are not toasted, stir fry them also.
Mix together the dressing ingredients. Combine with the vegetables.
Just before serving, stir in the noodles, sesame seeds and nuts.
Note: I have made this using tender-crisp asparagus in place of the cabbage. I frequently add shredded carrots for color.
