Puffed Omelet, Southwest Style
Prep: 4 minutes
Cook: 10 to 12 minutes
Serves: 3
This omelet, in whhich egg whites are beaten separately and folded into the yolks, rises to airy heights much like a souffle'.
6 eggs, separated
1/2 tsp. salt
1/8 tsp. pepper
1/4 cup water
2 tbles. butter
1 1/2 cups shredded Monterey Jack cheese with Jalapeno peppers
1 1/4 cups bottled salsa
Peheat oven to 375 degrees. In a medium bowl, whisk egg yolks with salt, pepper, and 1/4 cup water until well blended. In a large bowl, beat egg whites to soft peaks. Pour yolks over whites and gently fold together with a rubber spatula.
In a large nonstick skillet with oven-proof handle, heat butter. Pour eggs into skillet and cook over medium-low heat until bottom begins to set, about two minutes. Place skillet in pre-heated oven and cook until omelet is puffed and top begins to color, 8 to 10 minutes.
Using a heavy potholder, remove skillet from oven. Sprinkle with cheese, make a crease down center with a large spatula and fold in half, pressing firmly for 15 seconds so omelet stays folded. Spoon salsa on top and cut into thirds to serve.
