Walnut Brittle
(2nd place winner @ state fair)
2 cups sugar
1/2 cup water
2 cups black walnuts
1 cup butter
1 cup light corn syrup
1 tsp baking soda
In a 3 qt saucepan, combine the sugar, syrup & water. Cook & stir until all the sugar dissolves. Bring to boiling & blend in butter. Stir frequently after mixture reaches soft syrup stage (230 degrees). Add the nuts when the tgemperature reaches hard crack stage (305 degrees). Remove from the heat & quickly stir in the soda, mixing thouroughly. Pour mixture out on marble slab & as candy cools, stretch it thin by lifting & pulling from the edges with 2 forks. Loosen from slab as soon as possible & break into pieces. Makes approx 2 1/2 lbs. If no marble slab, use a metal jelly roll pan.
