    orange bar

    I am looking for a recipe for an orange bar that resembles a banana bar. It is not like a lemon bar, there is no crust and no filling. There is no chocolate and no fruit in this bar. It is more like a cake. The batter and the cake have fresh orange juice and orange zest in them. My mom used to make these and I can not find her recipe.

    Quite some time ago Soldier of fowl asked me to give him the recipe my father made for our bakery.

    It will be the the 4th or 5th post in the search and the title is:
    Hey, Grelo

    Click on that and you will have the recipe. I have alwqays made the cake in a 9" X 13" pan but you could make it in a jelly roll pan f the rim is high enough, or use two 9 x 13" pans.
    You could aslo use 3 oranges and one lemon instead of two of each. IT is best to follow the instaructions for "basting" the cake/bars with the sweetened juice and let it sit (covered with foil) fr at least 2 days. It will be nice and juicy. WE always served it with whipping cream but I guess a cream cheese icing would go good on it.

    Orange Bars

    Prep Time 20 minutes
    Cook Time 1 hour and 25 minutes
    Ready In 2 hours and 45 minutes
    Servings 3 dozen

    2 cups FLORIDA'S NATURAL Premium Brand Orange Juice
    2-1/4 cups all-purpose flour, divided
    1/2 cup sifted powdered sugar
    1 cup cold butter, cut up
    4 large eggs, lightly beaten
    1-1/2 cups granulated sugar
    1 Tbsp grated orange rind
    1/2 tsp baking powder
    Powdered sugar

    Bring orange juice to a boil in a large saucepan. Reduce heat to medium, and simmer until reduced to 1/2 cup (about 30 minutes). Remove from heat, and let cool.
    Combine 2 cups flour and 1/2 cup sifted powdered sugar; cut in 1 cup cold butter with a pastry blender or two forks until mixture is crumbly. Press mixture firmly into a greased 13- x 9-inch pan.
    Bake at 350° for 20 to 25 minutes or until lightly browned.
    Stir together eggs, granulated sugar, orange rind and reduced orange juice in a large bowl. Combine remaining 1/4 cup flour and baking powder; stir into orange juice mixture. Pour over prepared crust.
    Bake at 350° for 25 minutes or until set and lightly browned. Let cool completely in pan on a wire rack. Sprinkle with powdered sugar and cut into bars.
